hello! yes an airtight container/ glass jar works best. ALso moisture abosorber is also a god idea to extend shelf life. It also depends on the humidity levels where you live + introduction of moisture e.g. from hands to the dehydrated fruits when handling.

You will need to keep your eyes on them/rotate them as the oven can have un even heat distribution.
