Hi Lee. Have to agree fresh gar is even better than whiting. Have you noticed the gars in Port Phillip have decreased in number dramatically over the past ten years. Cannot work out the reason why.
@robertheywood5061 I fully agree with you on this point. Garfish butterfly fillets with Panko breadcrumbs and fried in something like Peanut oil (you can get the heat right up and it won't burn like olive oil does)
I just fillet the big ones mate as at that size the bones are much bigger and dont break up well when you roll them - the smaller gars i definitely roll flat

Id have to agree that you certainly dont see them around in the numbers during snapper season like we used too
Does no one know the butterfly method so easy and way better
