    I appreciate the love for Nurses. My sister is a nurse and worked in the Covid unit in her hospital. She has had a rough year personally and professionally. She just moved in to a tiny house and is in the late stages of Covid recovery. Not looking for anything free for anyone but when I say you treating nurses right really hits me in the feels.

    Haters gonna hate. The one thing I learned a long time ago is that I have to look at myself in the mirror now and then and I need to feel like the guy looking back is a stand up guy who tries to do the right thing no matter what. Doesn’t mean I don’t make mistakes but I have to know that guy in the mirror is at least trying. You do what’s right for you and your family all the rest will fall where it belongs even if some of that and them is in the trash.

    We all need a break and time with our family should always have a priority. I remember from years past you taking Dec and Jan off, good for you. Reflection is always important and God put us here for a lot more than only working and with everything else that has gone on in our world and country in the last 4 months who doesn't need a break from it all.     I’m fairly new to the channel and I just wanted to say thank you for the content you’ve created thus far. You have taught and inspired me how to care for my knives and for that it has rejuvenated my love in cooking in my kitchen. At this point I am researching to buy a high end Japanese chef knife to add to my kitchen (still undecided). So again thank you for all you do.

      Sorry I responded early, I found that part funny and then you got serious and so must I. I did finish the rest of the video as I always do. I appreciate you bro. I have learned so much from you and have gained a new hobby which is helping pass the time during this stupid pandemic. When I saw you posted this video I was like SWEET! I started watching it and noticed you posted the link to the december video and i wondered why so i clicked it to see if there was anything new. I got curious and read some of the new comments and they hurt my soul to read some diss you exactly like you just said. I almost replied to a few of them and said something but the damage was done. You had already said you were going to read every comment upon your return. Idk what they were thinking. I missed seeing your new material like everyone else but i was tickled pink not to see you until now. I hope you are rested, rejuvenated in both mind and body. I like that you don't take $#iT from viewers in your nice and professional way. I'd get colorful but I will pray about that.       And yes living in DFW TX that freeze was rediculous. No power is eye opening but no water filtration because of that is really bad. Made it out. But yea crazy times man..
      Also.. I wanted to mention the artisan #Kajibei. Great one man operation in sanjo that makes great blades for the price. Every knife shop ive talked to all say great things. Those who met him say he s great.

    I really appreciate when you recommend budget products, it's helpful for those of us new to taking good care of our knives. It helps us dip our toes in and also recommend entry level stuff to our friends and family. Love your work!

      I know it’s different for everyone, but the amazing thing about quality knives is their relatively low cost (versus something like jewelry or a car) to get something that you could use for a lifetime and then could hand down to your loved ones. I mean, you can get well made and great performing knives for $100 and if you want to go to $150 or $200 you’ll get into some really good stuff. It won’t be custom, but it will be something you could happily use to make meals that your family and friends would enjoy throughout your life, all for $100-$200!!!
      In the beginning, rather than buying a set of knives (where you pay for profiles/shapes you really don't need), most chefs recommend three knives: chef's knife, paring knife, and serrated knife. I agree, but as a knife guy, I'd say the first chef's knife should be a decent but inexpensive German steel beater, followed at some point down the road by a gyuto in Japanese steel (that you'll want to use all the time so long as you're not working with something that might hurt the more damageable Japanese steel... Japanese steel is generally harder (higher HRC/Rockwell) so can take a finer/sharper edge which is awesome, but is also more susceptible to chipping or breaking (which is where the inexpensive German workhorse comes out!). Look into a Mercer Renaissance for what is a VERY respectable traditional chef’s knife for under $40!
      OK, off my soapbox. All that to say, if you do some research and don’t buy everything under the sun, you can have amazing quality knives without breaking the bank. Enjoy!!

    I know the hardships of not having family time. I'm on assignment for months or even a year plus at a time. My wife has to raise our children as a single mother and also hold down her job as a hospice nurse at the same time.
    You don't listen to the naysayers, do your family first. Always.

    Thank you for everything you do, I really appreciate you. I am an Emergency Department nurse, I love your channel! I have been shopping for a while for a pretty good carbon steel knife and am kind of attracted to the Global G2 chef knife and pull through sharpener on clearance on Global's website for $99. I have never tried one, much prefer a wooden handle and have not mastered sharpening on the stone yet. Maybe a Yaxell when I finish this remodel on my kitchen and build a beautiful magnetic knife rack....Thanks again!!!

      I don’t think I’ve seen anything with chisels or tools from Ryky. He did sharpen a straight razor or two, but I think everything else has been kitchen knives.

    Hi Ryky, I want to pick your brain, debating between 2 splash-n-go's, Suehiro Debado LD-601 #6000 vs Suehiro "Super Fine" #8000
    Looking at your store, the #8000 is slightly more affordable, so wondering which would you recommend for a finishing.
    Side question: I noticed that the LD-601 seems to now be a #4000 grit, do the ones you have are the older models that are still in #6000 grit?

    I would really love to here your Venev diamond stones they are resin bonded.
    So they are used with water and have great feedback.
    And they are FEPA-F so the f 1200 leaves a amazing finish closer to 4000-5000 grit finish.
    I love mine, like them more them my shapton's glass stone's.
    Gritomatic has them in the US.
    And the do give products for reviews.
    Hope to here your opinion on them.

    Hello Ryky and readers,
    I am looking to buy my first whetstones, to get into sharpening my own knifes. I own some german knives (X50CRMOV15), a Kramer by Zwilling (52100) and I will pick up a petty when I am in japan the next time (I have not decided between a water quenched super aogami and monosteel shirogami #2 yet).
    Would the Naniwa Professional 1000, 3000 and a leather strop do the trick? (I would add on a 400 and the 8000 snow-white if i need more polish / re-profiling, the Naniwa's are the same price as the shapton pro's in germany). Does it make sense to stick with one brand and one stone height for the start to improve muscle memory?

    I'm searching for a new knife. I want to use it as an upgrade to my Zyllis Utility knife and my Victorinox fibrox (I think it's a utility knife aswell). Do you know a mix of a F-dick expertgrip flexible boning/filleting knife 5" (because of the handle and because of the backward bend), a Kai Shun classic flexible fillet knife so that I can get my hand between the handle and my cutingboard when I want to cut vegetables. And, if that isn't already integrated into the handle, a thick heel so I won't cut my hand on the rear side of the blade. Do you know a knife that matches (or comes close to) this description?

    The knives from Zwilling are quite nice, but we prefer the 4 Star and 5 Star series, because this knives are affordable and have a good quality. We have reviewed a few of them on our channel (in German)

    HEY GOT A REQUEST! YOU WILL LIKE THIS ... So used to use a Global 2" tourne knife for debearding mussels. It is the only knife I have never been able to get an edge back on. So, how bout a classic vid, sharpening an inward curved paring knife. Thanks Eh!

      @@Burrfection HAPPY HAPPY!!! Taking a break, Just about done 16 working knives between my wife and I. Been almost 2 years since they all really needed more than touch ups. 80, 180, 400, 800, 1000, 2000, 3000, 5000, 7000, 10000, and a leather patch, If you remember I have mentioned in the past, well years ago now lol. I use an inverted palm sander because of an old work accident. (stay at home Dad! Wife's a PSW) She is allowed to use one. (she has other budget type knives to use) AND I couldn't fix it... first time ever! 6" super steel 33 layer western styled San. with smooth sides. It's .. serrated. Fixed it down to just 3 small nicks. The rest, 3" 'birdsbeak to 12" Slicer, most of which I bought in 2001. My only Japan knife is the 6" San twin to my wifes, but J-Style and hammer finish! Got them back in 2010. My last knife I bought, and it was only because they sent the wrong one, haha hence twin. I couldn't send it back, and they were so nice. (the store and knives)

      @@jeff05989: Shun seems to make good products, but in my opinion they’re overpriced. I do think they tend to make thinner blades than most companies, so they may cut like a laser, but are more susceptible to chips and breakage. I like Yaxell, and will upgrade my Tojiro someday to Miyabi in SG2.

      @@b-radg916 don’t go on a miyabi SG2 go on takamura kagayaki much more chipper and also made from SG2/R2 steel very thin laser with good convex grind. Or under $200 kohetsu hap40 and the 270mm gyuto in that line is cheaper than a miyabi birchwood

    Hmm. “Content creators do get punished when they create less.” Those were your words (at about the 15:50 mark.) Would it perhaps be more healthy, positive, fair and accurate to say “Content creators are rewarded when they create more”?
    You have often mentioned that being able to make a living as a full-time RUclipsr has resulted in many blessings for you and your family. That still resonates. But when I hear you are creating boundaries and strategies to “avoid becoming a slave to RUclips,” what I hear is that creating videos has perhaps become less a labor of love, and some days it carries the drudgery of a conventional 9-5 job... in other words, it can be hard, and sometimes you would rather be doing something more fun.
    In the immortal words of the character, Red Forman from “That 70’s Show,” “It’s not supposed to be fun... that’s why they call it work.”
    Creating content can become drudgery when it seems like you have covered everything already, and now you are facing the prospect of repeating yourself. Is that perhaps where the frustration is coming from? Or is the production and editing of the videos becoming monotonous?
    There is something you can do for both: take on an apprentice. That will instantly spawn new content, and it will allow you to let someone else do some of the time consuming chores that are required for creating high quality content.
    I think the keys to success include 1) Choosing the right person (duh!) who your viewers will want to follow once the apprenticeship ends. 2) Setting a specific time frame for the duration of the apprenticeship, and 3) Making absolutely certain you are doing it primarily because you have the heart of a mentor.
    I think you will enjoy having someone to banter with and teach while you create content. If you pick the right person, you might even realize it’s not RUclips that you are in danger of becoming a slave to... it’s your own fear. Fear that it’s going to stop being fun doing what you do. Fear you will run out of ideas. Fear that you will not have the freedom to be everything you hope to be to your family.
