      For real. I worked with a once-in-a-lifetime cook but he got in a shoot out with the cops in 1999. He went away for 17 years but got hired immediately upon release. Then he vanished again. He was probably Tony Montana’s best customer too.

    Years ago a friend was starting his 1st restaurant. He had a buddy who was a parole officer. Told him he had 2 guys who would be great. My friend was sceptical but hired them. Turns out to be the best thing he ever did. Ended up owning 3 restaurant with the original 2 cooks moving up with him. The 3 of them ended up hiring several cons who just wanted out of that life and a decent job to support themselves

      Yeah we’re not all worthless people like society plays us out to be. I did 5 years in prison. Was out by 2005 and had a hell of a time finding a job. Now I work in a school for the last 7 years and everyone loves me here.

    I remember our line cook Marcus. He had a neck tattoo and full sleeve, wore a huge flat brimmed cap, and worked a second job at the local pizza hut. One of the hardest working dudes I've ever seen. Called me Broseph. I'll miss the guy.

    What most people may not realize is how accurate this really is. Several decades ago I had worked my way up to line cook from dishwasher. There were 2 other day shift cooks. Of the 3 of us, 2 were on probation and we all smoked.

      My father has extensive culinary experience, and I can confirm, every restaurant he's worked in has had 3 things: a druggie on the line, a crazy white guy on either fryers or sauces (depends on which burns you worse), and the one person who's normal enough to speak with customers.
      Befriend the druggie, he's probably the manager. Avoid the fryer guy, he's usually not very nice. And don't make the normal guy mad.

    The first 6 years of my working life were back of house kitchen and when my grandfather said he wanted to open a restaurant, but not hire anyone on drugs I literally laughed at him.
    Even the servers I knew did lines in the bathroom between rushes. One of the chefs I knew had to do a double and the owner offered him Adderall. Best food I've ever had

    Local diner had a line cook that fit this bill 100%.
    Diner got bought up by a bigger company and fired her because of the multiple assault charges.
    When they replaced her with a professional chef who actually went to a culinary school, the food quality dropped and they were losing a lot of business. The business they did get would get violent at times.
    Just because she had a record and wasnt classically trained doesnt mean she wasn't qualified. The person who wasnt qualified was the culinary professional who had no idea how to break up a fight like she could.
    Luckily she now runs her own diner across the street and helps other convicts get back on their feet.

      @@HeyThatsMe3 It says more about the penal system in general (and our knowledge _of_ the recidivism rate without an understanding of _why_ it's as bad as it is, which is due in large part to the job market lockout & the general lack of accessibility to jobs that provide a living wage... that & the poverty of drug treatment, mental health care & absence of bridges between incarceration care & at liberty care; plus the wide dearth of programs that will allow for training in trades and/or further education, plus...and...then there's...) than it does the individuals who've been caught in it for sure.
      Kitchen folk don't give the smallest fuck about any of that shit. Can you keep up in a rush? Do you show up for a shift? That's the shit that matters.

    When I worked prep at a BBQ joint a regular brought us 2 cases of monster because he saw us pouring monster into our cups on a break and wanted to make sure we had the fuel to keep making his favorite food everyday. That guy was a cool guy.

    2 and a half weeks in being a new line cook at a new restaurant I asked them if they're doing a background check because it might come back with warrants. . . They said no we don't do any of that here I find out that my cook line manager is on probation for multiple grand theft charges. His excuse was he thought he really needed to be somewhere and didn't have a ride at the time.

    I started at a restaurant as a doorman/barback. The line cooks would hardly give me the time of day. One night, I took a basket of bottles out to the bins. I noticed a Jaeger bottle had half a shot left, so I sucked it down. Unbeknownst to me, two of the line guys were quietly having a smoke close by. The next time I went through the kitchen, I was mercilessly heckled as degenerate low life 😆. After that, we were all friends. They were a great and hilarious bunch. It’s been almost 30 years, when I think of that place, it’s mostly that kitchen crew.

    Everybody is so shook when i say i was a line cook cuz im a little blonde ball of sunshine. But it was awesome. Everybody else in back of house was so sweet and i got all the hugs i could ever want ❤ i loved my kitchen family. They were the coolest coworkers ive ever had

      I was the polar opposite 😅I’m tall blonde and if you are late to the line with your plate I’m yelling at your ass to hurry up 😂I was the only female on the line at many male dominated fast paced restaurants all of them told me I wouldn’t last. Joke was on them I held the place together when the men got in fights with one another and left whenever they would come to me to ask me to be a manager. 😂 having my job be on the line for grown adults that can’t keep it together, no thank you 🙏

    Line cooks work 300% harder than anyone else in the restaurant in a hot, chaotic environment, get paid less than servers, and often have to do the "man" stuff the waitstaff can't or won't. While we listen to the servers brag about their tips. You won't pay a quality line cook more than a cashier. The restaurant industry is dying for this reason.

    Scary how accurate this is I love the ankle monitor thing that’s hysterical I knew one cook who cooked better drunk than he did sober every day. The man came in blasted off of whiskey. One day he came in sober, but forgot his uniform, and they fired him so I gave them so much crap telling them you can come into work drunk but by God don’t forget your uniform

      @@justinemot2282i looked it up and apparently it has to do with gangs, but I couldn’t find a definitive answer atm though. Most likely a symbol of their partner they keep after being imprisoned for probably gang related crimes, though also found people claim it means they committed murder, or that cartels require them so people on the street know that the members sell drugs without being too obvious. But yeah it most likely just means he was a gang member in that short.

      I've only been a manager for a couple of years, so I've only had one experience with anyone from a halfway house. He got high on some of his lunch breaks. Sent him home the first couple of times and eventually had to let him go. He was a danger to himself and the other employees and the customers.

    Was a waitress at the nicest restaurant in a tourist town that’d been featured in magazines and…yup XD
    Had one dude selling moonshine out the back door, and another that we regularly kept an eye out for cops in the dining room because he had a warrant, I was half-living in my car, and a vape corner in the kitchen complete with a community 🌲 pen during brunch rush on Sundays.
    Best place I’ve ever worked tbh, one of those rare workplaces that was actually like a family.

    This gave me flashbacks to working at dennys. The night cook was nice and the only one who smoked the kind of cigs I did so he would give me cigs and I’d offer him one if we were out. he had an ankle monitor and lived off cotton candy BANG! energy.
