Cutting Sheet Cake - fishing line method

  • RUclips needed a video tutorial on using dental floss, fishing line or strong thread to cut sheet cakes. eHow has floss information. RUclips has a few examples of how to use an warm knife wiping it off with each slice - proof that this method is easier and leaves the icing and most decorations looking nice. With slight modification and careful planning any shape cake can be cut with this technique. Be sure to use a knife or server between slices and under the icing to separate the slices completely. If it doesn't work - you did something wrong!

    I tried this last night on a full sheet cake, decorated with a ton of thick frosting, and it worked perfectly!
    My only suggestion might be that when you're at the bottom of each cut, wiggle the fishing line back and forth several times, forcing it down. If the top of the cake moves, you haven't cut all the way through yet.

    I have done wedding cakes and big venues for many years. I was always hired to stay and cut the cake. You have amazed me. I will forever keep fishing line in my decorator tool box!!!

    Awesome! I need to cut 4 sheet cakes for my kids camp party tonight and this helps a lot......thanks. love how the decoration doesn't get ruined by cutting it this way. I am going to pre-cut the cakes before taking it to the camp.......yay!!

    Thank You, Thank You for this video. I have to cut a 1/2 sheet cake from Costco for a celebration of life get together for a very dear friend of mine and I really didn't want to make a mess of the cake. So thank You very much for this video.

    As a caterer, I cut a lot of cake. I know for a fact, this actually works great - if anyone is doubtful. I use this same method on 4" tall round wedding cakes.

    Thanks for the video. I heard about using dental floss but the visual helped a lot. And the trick of sliding along the bottom for a clean release was new to me. I am trying it tomorrow on my parents' 60th anniversary cake!

    that was slick, the manager asked how to cut a large flat cake without the mess of using knives, well he used the knife before I found this method, hes was a very messy knife, and frosting pulled off the cake in different spots, I like this method, even getting it off the board is slick and professional.

    Being an amateur baker at best that is still learning tricks of the trade, ... you just blew my mind! Thank you sir! Great way to do this!! My dentist usually gives me floss after every visit, but I've just given them away since I use floss pics. Not anymore!

    It worked well....but I had to use a very long seratted knife... I kept cleaning off the knife and it was perfect! Thanks for your video!

    Love the demo !! But, one question though. . . noticed it says "2 x 2 inch pieces" at the 1:30 mark, but wouldn't that be 3 x 3 inch pieces since a standard sheet cake is 18" x 24" ?? What am I missing or forgetting here ?? :- /

      I never got out a gauge or measuring tape. 2x2 sounded healthy.... But your math is correct. If cutting 6x8 the pieces are 3 inches square and there are 48 servings. 2x2 slices would provide 108 servings. 9 vs 4 inches^2.

    How many pieces does this yield ? I ordered 1/2 sheet cake and around 33 people are attending, we love cake but I want to make sure there is enough for everyone.

    Not hygienic with fingers wiping excess frosting. Ew!

      Wiping a knife with a cloth is a risk too...a low risk. The surface area of the string being lower helps reduce transfer, but realistically any contamination is in consequential. I work in sterile environment, the OR. But the true test is that I've never had a fermentation infection while brewing for 25 years. At least I didn't lick my fingers, though tempting!

      @@mgasman I'd opt to wipe with a paper napkin, but I get your point. But, hold on there. Fishing line is made of: nylon, polyvinylidene fluoride (PVDF, also called fluorocarbon), polyethylene, Dacron and UHMWPE (Honeywell's Spectra or Dyneema). Do we really want all that, even in trace amounts, shedding on what we consume?

      Certainly hygienic. Certainly not sterile. A fresh length off a clean spool would be darn close to the cleanest thing you could cut the cake with. Do you bleach your knives after each rag wipe??
