Hi. Yes, you can use any cord, or yarn. Pay attention to the thickness of the cord and choose a hook of the right size.
You had 12 single crochet around the circle, if I wanted to do the circle bigger do I add 18 single crochets? 6, 12, 18? Is that how you worked it out?
To make the circle bigger, you need to add more crochet to the magic circle amigurumi, for example - 8, your circle will be bigger and you can add twice as many crochet - 16. Do not add more than 12 single crochet to the magic circle amigurumi, or you will have a hole in the middle of the ring that you will not be able to pull down.

Hello, thank you for your question. I'm a bit unclear on what you mean when you want to use strips of sheets. If you want to make the coaster larger, use a thicker yarn and, accordingly, a larger Tunisian crochet hook.
