    You all have asked for a step-by-step tutorial in making mozzarella cheese, and here it is! I'm showing you exactly how to make mozzarella by using our raw goats milk from our home dairy. BUT since I know you don't all have access to raw milk, I decided to do a little experiment using the cheapest store brand cow's milk my grocery store had to offer? Will it work?

      @@RootsandRefugeFarm Can you add the salt to the milk/water mixture instead of after the cheese is made or would adding salt before change the consistency?

      @@RootsandRefugeFarm I know this is an old video, so not sure if you will see this, but what if you don’t use a microwave? My husband and I haven’t owned one our whole marriage (by choice) and are starting our first goat herd. Do you have suggestions for people who don’t use microwaves but still want to make cheese?

      @@dre.ale.1191 if you're using raw milk, you can heat the whey and melt the mozzarella curds in the whey. With pasteurized milk, unfortunately, it won't melt in the heated whey. You can do a search on RUclips or Google to find out the temp to heat the whey for melting the curds.

    My Dad was a licensed cheesemaker and one of the cheeses he made was mozzarella. The cows milk they used always was pasteurized, my Dad was pasteurizer certified too. I had no doubt the pasteurized milk would make mozzarella. It was cool to see how to make cheese on a small in home kitchen scale. Thanks for sharing this video. Dad has been gone for almost 6 years, and this video brought him back for a few minutes.

    Very good job! We love making homemade goat mozarella! Have you ever made string cheese sticks by stretching it out long and folding and long and folding etc. Then cutting it with scissors when long. I have a mozzarella video showing that fun technique at the end. Great video! Xoxoxo

    Thankyou for the comparison. Raw milk is banned in Australia (for human consumption)- unless you own milking animals. So all our milk is pasteurised. It will be good to give this a try

    This is so funny because I was wondering if you ever made goat milk mozzarella. This is why. Your husband seems to be really talented with building stuff and I'll bet he can make you a really great Italian pizza oven. It would be great outside on your property. There are lots of instructions on RUclips) And you can also roast meats in a pizza oven. I can only imagine how great your pizzas would be with the mozzarella you make and fresh tomatoes, garlic and holy basil all from your garden! I have been after my husband who is from Italy to make one but he just doesn't have that gift of building. Anyway, I enjoyed the video and I will have to give mozzarella making a try. 💐

    I've used store bought cows milk and I follow your method except I microwave it in 1 minute increments instead of 30 seconds. It always turns out good! Love your videos!

    Jess you are such an inspiration. I really miss living on acreage (did the usual move to the city for $$) Hoping my husband and I can buy property with a little land soon! I really love your down to earth nature. & your gardening tips are the best. Built myself a little planter so hopefully I can grow some tomatoes here in Sydney whilst we save for our property :) I honestly don't know how you manage to do all the things you fit into your day whilst looking after your family but hopefully I can get there some day!!!

      I would think you could probably just set them over a bowl of hot water or double boiler and warm them that way????

      I found a recipe online without microwave instructions. Sorry, I don't remember the website. It said to dip the cheese back in the hot whey to heat it between stretching.
      I hope this helps. I'm sure you can find the recipe if you want more information.

      Gimi H Yup!! I made motz cheese before. I heated it by putting it in a bowl of hot water and kneading it smooth and stretching it while hot. Came out perfect 😊

      Just use a double boiler and watch temperature and squeeze out whey as it heats up.keep folding till stretch starts to happen. Then pull the same as she did.

    You honestly have made my small dream of owning a homestead seem much more achievable than i originally thought! When i met my husband we hadn't really thought about it and since we've been married our health had been declining with thyroid, autoimmune diseases and vitamin deficiencies. Part of that has been because our eating habits and just not eating whole delicious fresh foods and not getting outdoors like we used to.
    I personally am more of the picky eater but I want to try to start making an effort to try new things and expand my tastes through a small garden on our apt porch. I haven't actually achieved growing any thing to harvest yet, I have kept on trying and this is my third year to give it a go! I'm preparing my stuff to start plants at the correct time and use a lot of what i have learned from watching you and teaching me tips I can use(I live in N. TX) and it helps to know little tidbits you add in your videos! You and your sweet family are such a delight to watch and see someone living in a way i strive to and it's so incredibly inspiring! I hope that you know how important a resource you guys are and how amazing it is to spread such happiness and knowledge!
    Keep up the hard work and I can wait to join you in having a homestead and a great way of living!

      This is what I was wondering.
      I've seen it on another channel. Then using some other way to keep it warm.. they use the liquid (whey) I think....
      We have a microwave..(its a rental and above the stove..but we have one we own in our shed..my husband can't live without it lol).
      I personally try avoid to use it and use my air fryer or cast iron for reheating. If I had raw milk to make cheese..I personally would do the alternative to microwaving.

    I tried cheese with store bought milk and it worked ok. I need to try the ice. If true, I wonder...would it work for other milk recipes?
    Maybe i can convince one of our cows to stand still so we can have raw milk. We have miniature zebu and I haven't been brave enough to actually try it yet.
    I have been catching up with your channel today. Love the garden and testimony. I looked up the video on your garden construction so I can try to organize my garden. It is driving me crazy. Tomatoes everywhere.
    I think we are neighbors, at least by Utube standards. I live just north of Ft Smith. Reference to the cedar slabs sounds like possibly a sawmill very near me. You are welcome to come by whenever you visit your brother. I could use ideas for more projects to drive my husband crazy!
    4th of July I was in the woods clearing for a new fence. My husband told me I was crazy because it was too hot. He refused to participate so I took my chainsaw and cut down some trees. Now I just have to finish dragging them out! Need cedar?

    😁 love this little video 🙂 I used non homogenized milk last time I made mozarella and I ended up with more cheese than the previous batch in which I'd used milk that was homogenized, it is a little bit more expensive but definitely worth it, the flavour was a bit more intense aswell. 😊

    FINALLY have a nice little dairy goat herd of Nigerian Dwarfs with an Alpine buck and two does (with two doelings and a buckling) in MILK! I also just added a triple set of half Saanens half ND's who are six months old and should cross beautifully with my Buck! I'm getting a quart a day right now with one morning milking. The babies can be weaned in another month or so and I'll go to two a day milkings and I'm so so so excited to have FRESH RAW MILK.
    I'm making a pizza pot pie tomorrow and am considering using every drop of goat's milk I have in the house to do so.
    hummm....lol. I have cow's milk too, but it's pasteurized and that goat mozza looks amazing.

    I found some pasteurized milk in town and made cheese last week. I couldn't find my cheesemaking rennet that I know I bought so I used grocery store stuff. I was scared it wasn't going to set up but read the recipe that was in the rennet packet and they had said to let it sit for an hour to set up...so I waited and it worked. raw milk is not legal to sell in our state. I went to South Carolina a while ago and looked for raw milk at a grocery store...I couldn't find any....I couldn't believe they weren't practicing their raw milk freedom!!

    I just successfully made cheese! Thank you! I did it with pasteurized cow’s milk because that’s what I have access to. It turned out beautifully and it’s taking so much self-control to not gobble the whole thing up right now. 😋

    Hi Jess, you are never going to believe how you helped me. I had made a batch using regular milk and it turned out like cottage cheese before I got it right with trying again with RAW COW MILK. But here is my news, I hadn't tossed out the cottage cheese effort yet, so I thought I would try, the microwaving it for 30 second intervals and see if I would get the elasticity that you got and salvage my effort. Whallah!! It worked!!! Like you said, not as much stretch, but enough to make a bunch of cheese balls that taste great! The microwave fixed the crumbling (no stretch) initial texture. Ty😊

    Thank you so much for testing out store bought milk for those of us who unfortunately don’t have access to raw milk. I’ve already made your farmers cheese, which was delicious. Next I’d like to try mozzarella, but I was wondering if you’ve tried making it without the citric acid and instead used vinegar or lemon juice. I would much rather go with those options, but not sure if it will be a successful swap.

    PS I had a hard time getting my cow milk cheese to get super stretchy too. I can get raw milk just across the border at a little gas station Market. So I have to get some of that next time I make cheese

    Horizon Milk does pasteurize their organic milk but it is not homogenized or ultra-pasturized. It is expensive, however.

    Holy Cow! Success the first try. Easy! Delicious! I'm keeping the whey for cooking (or treat the chickens) and I gave the cooking water to my dog. He loved it! No waste here. I'll be making this often.

    I make a lot of cheese. You can use store bought milk - as you've shown. But the ULTRA-Pasturized is NOT good for cheese making. I make cops milk mozzarellas the same way you showed but with my own milk... and it comes out good usually.

    Thank you for the experiment! From what I read it seems like the homogenization process also affects the curd properties. Like your experience I haven't seen non-homoginized milk even though I've read it exists.

    You have answered all my questions! It’s illegal for farmers to sell farm milk her in Manitoba Canada. So it’s next to impossible to get unpasteurized milk. I will try store bought milk! Thank you again.

    Help! Mine stayed hard & separated into curds. It won't stretch. Raw goat's milk. It also smells goaty. I used a butter muslin cloth to squeeze the whey out. Should I have left it more moist? What looked like cream kept coming out of it. So it's a pretty dry cheese. Not yummy on this batch. Any tips?

    I have heard that what actually makes the store bought cow milk not stretch properly is the homogenization not the pasteurization. I’ve seen pasteurized non homogenized milk made into perfectly stretchy mozzarella not heated in the microwave, just in boiling water.

    What does raw goat's milk taste like? Is it gamy/funky like goat's milk cheese? You said that the mozarella tastes just like cow's milk mozarella.

    The only thing I have access to here in Canada is Homogenized 3% cow milk or N.H.T. pasteurized milk....I tried twice now without success, once, totally mu fsult as I only noticed after mid-away that I didnt even noticed that I purchsed skim milk .lolol...so I really want to do this so anyone has suggestions?
    I spoke to a farm to see if I can buy directly and she told me that in Ontario its against the law to sell unpasteurized milk.

    Could you dry it out and shred it to sprinkle on pizza? How would you recommend doing that if it’s possible? 3 of us in our family needing to be DF and trying goats milk as an alternative. Thank you!

    I have tried twice. Once yesterday and epic fail. Then another gallon of moo today...epic fail. Third times a charm? Uhm nope..they have it at the store. I never give up but sometimes a girls gotta know when to stop the disappointment lol. Thanks for this video though. 👍

    I use yoghurt whey substituted for water to make bread with whole wheat flour. It improves the flavor *SO* much. I found the tip in a source about using whey leftover from the cheese making process. It just said "whey" and did not specify yoghurt whey or cheese whey.

    Cyndi Socal. Want to do this. Daughter who is 15 and a half. The half really counts. She wants to drive.😌 son 26, waited until 17. She wants a motorcycle, he is a mechanic and told her she gets a Volvo. Literally, he is looking for one to restore for her. Anyway, she likes steak, potatoes and cheese. Tilamook. I asked her to make cheese with me. She said no! I guess we have to resort to corraded artery films. She eats very few veggies. Alot of fruit. Comes from a divorced family. Ours. Loves steak, potatoes and cheese. I give her a veggie vite. But worry about cholesterol. I am going to try the goat cheese mozzarella.

    Hi Jessica, I love your videos. I made mozzarella today from goat milk, I got 9.8 oz its perfect mozzarella cheese easy to make I love the recipe. And my family love the cheese. I never made any kind of cheese in my life.

    Thanks for the lesson on mozzarella. Have you made any hard cheeses with goats milk? We are experimenting this year, our 5th year with dairy goats. We are getting 2 gallons a day right now and still bottle feeding some of the babies.

    You can use homogenized and pasteurized, just not ULTRA pasteurized bc that process uses higher heat and alters the milk too much
    Homogenization just spins the milk really fast so it doesnt separate on store shelves and look offputting to consumers

    I totally loved this, I can get regular milk but goats milk is exspensive where I am at, i mean i dont have a farm but i feel, i will live vicariously through you! I would try this really, what else do you got in that head of yours its fascinating! You are a blessing to watch! Do you have a cookbook that you go by or do you cook for the way it is for nowadays we have help with microwaves and different helpful items in the kitchen. I just think cheese cloth is so unsanitary and like your way much better. Maybe you should write a cookbook, I would like to cook as they used to but not with the hard work it takes to do so. Our lives are so much more busier than they used to be, with kids, school, and the extra stress of covid-19.

    The captioning says I smoke pot every time I make cheese. Lol. I rewound it to check. It’s always way off but that was a funny rewording of what you were saying. You were talking about a stainless pot verses an iron pot. I can’t wait to make some cheese
