This is because the sensors perceiving light and dark are much more sensitive then those perceiving color, However you will see a tiny glint of color in the sky here and there. The images that are generated from NASA do enhance these colors and often expand them by using data captured of light outside our visible color spectrum. They do not depict wrong information but they enhance the image to be better then we can ever see with our own eyes. Everything you see in those images are there, just not visible to our eyes.
