    How do you make the garlic/ginger chunks? are they frozen and how much of each do you put together?

    Garlic and ginger in the food processor (equal amounts?) and freeze the paste in ice cubes or just in a freezer bag. Genius!

    I suggest using regular olive oil. Do NOT cook with extra virgin olive oil.
