I sometimes see Loki less of a Trickster and more of just someone who is confused. Loki has always a hard time fitting in and it’s led to him being confused to what his role is. He seems so good at confusing others because his feelings are genuine. Because Loki is supposed to be a trickster, we just assume he is pretending to care or show feelings, but I think he actually does care but is so lost that he reverts back to trying to be a villain. He just slapped the trickster title on there because it’s what people have always known him as. Hope that makes sense.
Hes a man who only wanted to be seen as equal to his brother, whose obsession with perceived (and in some cases true) lies of his "father", blinded him to chances he was offered, and to love he was shown. Hes a trickster, because thats how he felt everyone treated him, as a trick or joke, a mockery. Never truly being seen as a son of odin or brother of thor. afraid to acknowledge his own love for himself, his family, and his people, people he saw their love for him as a lie. Its why in both infinity war and ragnarok, when he sees chances to have both family AND glory, he jumps at them, he becomes the saviour of Asgard twice, both times risking his life for the first time truly (instead of always hiding behind an illusion) because he felt he was acting on a truth for the first time in his life. its why variant-loki from the series makes his choices, seeing all the loki's who "survive" being fundamentally unhappy, and the ones who choose good only regretting not choosing it sooner (old loki just wanting to see thor and odin again).

If we watch Thor, we see Loki only went really off the path when it came to finding out he was adopted. At that point he felt lied to...for over 1000 years...and before when he was happy for his brother he now felt like Odin didn't truly believe Loki worthy. Odin would later show he really loved his sons, and likely his daughter, but he was never the really good father.
The devs confirmed this theory that the mindstone enhanced his jealousy and anger towards Thor. Even the eye gouge with the device from a civilian was wicked and unlike him.

(even just counting time within the confines of the movie) Also consider some of the scenes in the movie/deleted scenes of the avengers (from before the series so it's not like the Avengers movie is the retcon) where Loki is already quite injured at the very beginning.

Personally, I think that when Loki nodded his head, he was free from the mind stone for a second, and then it took control again and realised that Thor would only continue to free Loki, so it made Loki stab him. You can kind of see Loki grimacing when he stabs Thor like he doesn’t want to do it. And then he smiles, symbolising that the mind stone is now fully in control, again.

He didn't let loki timeslip to any different positions than required to make his mind to kill sylvie , and Loki in the end was too rigidly in love with his new friends that he didn't even want to go back to his asgardian/GOM days. Although good theory make loki s2 7 epi long and in 2nd last episode right before he decided to became god of all time he uses timeslip power 1 last time to undo only small past wrongs which will not affect the timeline in a serious way but maybe that can have significant outcome on his ending but in the end realizes that he's defeated for any kind of happy ending and in literal sense is burdened with a glorious purpose.

It's a fun theory, but it doesn't quite fit with the performance. Granted, there's no way they could have known at the time, but Loki messing with Thor to give himself an opening makes way more sense.

I think that he mostly just wants recognition and doesn't always understand the weight of his actions. I think that for a moment he truly saw what he had done but then chose to mask his true feelings and pretend he did it to trick Thor. He keeps reverting back to the trickster because thats all anyone ever sees him as

My theory is that sense it is canon he was under mind control that he got out of mind control for a split second and was trying to want Thor that thanos was mind controlling him and that he needs to stop it but failed miserably. And when he was no longer mind controlled in the dark world he has a go big or go home mantality so he acts like it was his plan and idea
