A fun tip on buying eggplants is to look for a "male" eggplant. The female eggplants have significantly more seeds, so I prefer the male. The way you can tell is to see the little natural marking on the bottom of the eggplant and the ones with a "slot" shape are female and the ones with the rounder "dot" shape are male. As chef john always says "dots not slots"
I was making some puff pastry garlic parm twists and I needed a basting brush and realized I didn't have one either! So I used a brand new, never used makeup brush.👍🏼😂 True story.
For a sturdier (less soggy) egg plant crust, you can slice them thinner (1/4 in.) and let them sit salted between sheets of paper towel for a few hours, then pat dry before oiling and baking. And bake longer before adding toppings if you prefer a crispier crust.
I wasn't convinced this would help, either, and have always had soggy egg plant. I finally took the time to follow these steps, and it was well worth the extra time and effort (even though I'm usually one to lean toward easier recipes). This is one recipe I no longer skimp on. Hope you enjoy :)

You did 2 things wrong in my opinion. Too many toppings. Keep it to 1 or 2. Make different topped ones. Second, let it cool for about 5 minutes. It develops flavor. Kind of like eating day old pizza seems to taste better than fresh sometimes.

You realise what cooking does to the bacteria right? Yes, you should wash them to get rid of any pesticides but it doesn't clean bacteria from people touching it, unless you're using soap on your eggplant...
