  • Winter Honey (original song played on ukulele)
Themed train rolling all lit up high above, as we step along below the scene like subtitles
Bent up to watch the coloured lights trail away, catching the reflections of the carols
Tumbling from High Level Bridge, bouncing off the bare coulee walls through the sparkling mist surrounding us
Near the coal-mine mouth we fight the freezing hanging to each other until the last note falls
We've got all we need to last as long as the music
We've got all we need to last as long as the music at this time of year has
A good story is all we need to believe, when it's sweet, lifts us high
When it's all sugar like winter honey
A good story makes us want to believe, when it's sweet, lifts us high
When we've been raised on winter honey
Frost clings to everything outside, the snowy ground and leafless trees bear no blossoms
Bees are clustered in the hive to serve the queen, and not one of them is outside flying
It has been this way for months, meanwhile, at the Christmas Market
They're sold out of winter honey again this year, wait...what's that? How is it made?
The questions get lost in the holiday cheer
A good story is all we need to believe, when it's sweet, lifts us high
When there is nothing to compare to winter honey
A good story makes us want to believe, when it's sweet, lifts us high
When all we know is winter honey
You introduced me to the honey bees that followed you from New Mexico
We housed them in hives we built from cedar ourselves, and watched this all grow
I tasted honey from the comb for the first time from your finger tips
It is the same taste each time we touch lips
More than sweet, this is pure, this is real, this is nothing like winter honey
Frost clings to everything outside, the snowy ground and leafless trees bear no blossoms
It has been this way for months, meanwhile, at the Christmas Market they're sold out of winter honey
A good story is all we need to believe, when it's sweet, lifts us high
When it's all sugar like winter honey
A good story makes us want to believe, when it's sweet, lifts us high
When it's all sugar like winter honey

This is lovely! And we don't really hold for rules here - it's in as far as I'm concerned! Merry Christmas, and hope to hear more of you.

Thank-you! Here is the first bit of what Google's AI says..."Honey laundering is a type of food fraud that occurs when honey is adulterated with cheaper ingredients to increase its value or reduce production costs. This can involve mixing in syrups from corn, rice, cane, or sugar beets." (and commonly blending in cheaper honeys of unlabelled origin).

This sounds like an instant classic 3 Bird. What a great lyric. I guess this can be applied to many things that are adulterated and diluted for mass consumption. I love bees, well I love nature in general, wasps, snails, spiders et al. They are all welcome in my garden and house. Sadly though, honey is something that I’ve never really liked, I don’t know why.

Thanks, I appreciate the comments! Ironically, I have virtually limitless access to "free" honey and rarely use it. It baffles me because I am very frugal, prefer local & natural products and foods that aren't highly processed - so I should be using a lot more honey instead of buying sugar. I don't dislike it, it just isn't what I reach for as a sweetener (I use it more in cooking and making soap).
