  • Bake with me: Arkansas Opossum Pie from a real Arkansas Granny. Why we call it Opossum Pie.
    Pecan Shortbread Crust
    1 cup all-purpose flour
    ½ cup butter
    ¼ cup brown sugar
    ¾ cup pecans chopped
    Cream Cheese Layer
    8 ounces cream cheese softened
    ½ cup powdered sugar
    2 Tablespoons heavy cream
    Pudding Layer
    1 cup sugar
    ⅓ cup cocoa powder
    3 Tablespoons cornstarch
    2 Tablespoons all-purpose flour
    Pinch of salt
    3 egg yolks
    2 cups whole milk
    2 Tablespoons butter
    1 teaspoon vanilla
    Whipped Cream Topping
    ½ cup heavy whipping cream
    2 Tablespoons powdered sugar
    ½ teaspoon vanilla
    1-2 Tablespoons chopped pecans
    grated chocolate

    You, darling, are sweeter than mountain honey and cute as a speckled puppy in a red wagon! My Mama would've just loved you, like I do.
    Im going to have to thank you for the chocolate pudding recipe. Mama always made it, but never wrote the recipe down. I haven't had it in years, since Mama went to cook for Jesus. I'm so glad to have it now!
    As for thepossum pie, I'll have to make that for my husband.

    Oh, hon. I was expecting pie, and ended up with tears. You just remind me so much of so many wonderful people I have known, and how they put so much love into what they made. All them who taught me how to cook, and how to use my cooking to show my love. Your bright blue eyes, and bein' so plain-folk country. I mean that in the best possible way. You are like my aunts, my grandmas, my sister, all of them gone.
    My late husband and I used to watch Beverly Hillbillies all the time while he was dying. He got better for a bit, and then his final heart attack took him on our front walk, right in front of me. He would have loved this pie. As I am Vegan now, it will be a bit of a pull to turn this into something I can eat today, but I think I can manage. The butter and heavy cream are easy, and I've made a custard for ice cream that had no eggs (I used olive oil, which sets up nice when chilled). I don't know how to compliment you without sounding weird or sexist, so I will just say, thank you. You are inspiring. I hope your family sees what we see here, which I am sure is just a smidge of you. Thank them for gifting us with what you have here. You will never know how many people you have kindly touched with your ways.
    Oh, and in years to come, when one of you is gone, please, if you or your husband need to talk to someone who understands the pain of that loss, know that there are complete strangers willing to help, to listen, and try to lift y'all up in that time. Love recognises love, always, and forever. Blessed Be.

    We ate so much of this as a kid my grandma and great grandma were from Oklahoma and brought the recipe with the whole crew. 9 children and great grandpa. Oh how people looked at us like we had no brains at all every sunday

    That pie is a keeper, and you actually taught this old Nana a new trick. I never knew that plastic wrap would keep my chocolate pie and chocolate pudding from getting skin! Thank you!

    I loved the video! My Granny made a "corn meal pie". Funny story about that recipe is, only one woman per generation could make it properly. My granny, then my momma, then me! And i had all boys! Hoping one of them will be willing to learn the secret and make it well!! They're all grown and moved away but teaching one of them is at the top of my bucket list!

    I’m in my late 50s, born and raised in SoCal but my dad was born in AR and his family migrated here during the Great Depression like so many others. All that said because it is cultural touch points like Opossum Pie that remind me of my childhood growing up with a subculture slightly different that my other suburban friends. The first time I offered a childhood friend a slice of it after school one day … 😂

      Every year mom took us to Arkansas to visit 3 of her sister's and families.
      Mt. Judea, Cave Creek, and Jasper Arkansas.
      I thought those Arkansas mountains were really big until I saw Colorado's mountains in Denver, Boulder Falls, Estes Park etc. They are huge and beautiful.

    Tip for homemade whip topping put bowel and beater in freezer to get cold it will help keep the whipping cream cold . Saw it on another show.

    Thanks so much for sharing. Years ago we were invited to a friends parents for lunch. As soon as I heard possum pie, I wanted to go home. Everyone enjoyed a good lunch except me. I nibbled on cornbread muffins. I took a deep breath when dessert was brought. At least I didnt think road kill would be in it. To my horror they said it was the possum pie. I waited til everyone had started eating and bragging on every bite. I finally got a tiny bit and immediately got more. She would not share the reciept. You have finally filled in the gaps. Unfortunately, I can no longer have chocolate.

    That is an amazing oven. Call me sheltered, but i havent seen the cabinet door type opening ones like that before. Its downright handy. I think its called possum pie cause everybody gonna be playing possum after a rich treat like that, sawin too many logs to think about work😂.
