    IMO the difference between Biryani and Pulao is just the cooking method.
    Outside India, Pulao / Pilaf / Pilav predominantly has meat, so it doesn't make any sense to say that Pulao is vegetarian and Biryani is non-veg.
    I guess both can be either veg or non-veg.

      NoNee Exactly. In Biryani we cook rice and vegetables or meat separately for 80% and then layer it to cook in dum for rest cooking process. Meanwhile in pulao both things mixed cooked together.

      This is why colour of some rice remains white and some turns colourful because of spices. It's in the method of cooking. Those who know nothing about cooking history can still argue. For them I suggest read some books.

    Biryani.. rice cooked with only spices and vegetables are cooked separately, then steamed together... but in pulao.. rice is cooked with veggies, spices together in single pot..

    Both biryani and pulao can be made with either veg or non veg ingredients. The difference between the both is cooking method and spices.

    In the Biryani, rice and meat/veg are cooked separately.. but generally in pulav, vegetable are cooked along with rice.. that’s the basic difference.. and biryani has lot of flavors

    There is veg biriyani with the same spices as non veg but in order to enhance the taste buds they put Monosodium glutamate or MSG which gives a umami taste like chicken and meat.. But if you are making please don't add green peas use beans, carrot, mushroom and paneer. If you add peas people will call it peas pulao

    Pulao and biriyani were invented by Mughals which was cooked for there soldiers. Both are Persian words.

    I've had Veg Biryani once, the actual one, which tastes exactly like Biryani without meat obviously but the main reason veg.biryani is termed as pulao is because of the incorporation of peas and beans in it. Everyone who has had Biryani in Trains has that particular thought process, Veg Biryani definitely tastes spectacular but Mutton and Chicken biryani will always hold the top position in any Non Vegetarian's heart. I'm fasting today and I'm talking about Biryani 😭😭

    In addition to the last comment i wld like to mention tht soya nd soya champ r two different things....wat u usually try is soya nd its different forms...same way Soya Champ is a different form when u hav Soya in the shape of a cutlet or patty then it is soya champ otherwise it is always soya tikka (if cooked in tandoor) or just soya chunks...it is always made of soyabeens but the texture is like chicken...the name changes according to shape nd the way it is cooked

    Hi Ivana....nice video nd gudd discussion...i hav always supported the idea of veg biryani nd for me these r always 2 different dishes (obviously difft ways the white or basmati rice is cooked)....one difference for me always is tht veg pulao will b always dry nd lighter on masalas while veg biryani will b always wet (thick gravy masala) or juicy nd full of dry spices.....i m frm Hospitality industry nd i knw wat i m xplaining still it is my opinion

    Hi Ivana
    The word Biryani is derived from the Persian word Birian, which means ‘fried before cooking’ and Birinj, the Persian word for rice(no particular reference to Chicken, mutton or vegetables). When rice are cooked with vegetables then it is called pulao, Pulao itself is not a complete dish as everything (rice vegetables and spices ) are cooked all together, so u can not call it a Biryani. But when rice are cooked with gravy( tht is cooked separately) which can either contain meat or vegetables, also called Subz Biryani (subz=vegetables) . As long as gravy is prepared containing curd be it with mutton, Chicken or vegetables and layered in between rice and is put on Dum( pressure cook in steam) IT IS INDEED CALLED BIRYANI . In short Biryani is word associated with rice and the way they are cooked in a particular way.

    I believe Biryani was introduced to India by the Mughal Emperors. Babur, the first Mughal emperor was from Uzbekistan. The national food of Uzbekistan is Plov which is similar in concept to Biryani. And NO, there is no veg version of Plov. I don't believe either that the Mughal emperors ate veg biryani. Veg biryani was just created to appease the veg majority Indian in the old times. It's not a real thing. It's like saying Veg-Bitterballen is a thing in the Netherlands

    I was surprised that you were told if there is no meat it’s Pulao. That must be coming from pure non-veg eaters who do not stomach an atom of anything vegetarian. I have friends like that. But in simple terms , and it’s actually what differentiates Pulao from Biryani is that Pulao is not made with any masala in it. Like your host mentioned it’s with peas and Jeera and ghee. While it can be eaten plain many have a curry accompaniment to it. Whereas Biryani Rice is part of a good blend of Masala into it, irrespective of veg or non -veg.

    To get diverse menu for veg biryani you have to go to a particular shop in bangalore whereas to get a variety of non veg biryani you can get it from anywhere lol.

    Basically biryani is Mongol dish because of their nomadic lifestyle they don't keep much vessel and different types of food so they prefer whole meal in one dish. So the meat with rice is the base of biryani and when it introduced in India the Indian masala make it magical biryani of today..

    The cooking methods are different, Ivana. Pilaf is a one pot meal. Making Biryani requires Nazkat or Finesse as they would call it in Urdu. The meat/ vegetables and rice are cooked separately and then the flavors are brought together by placing the meat/ vegetables in alternate layers. In the case of Tahiri, the rice is placed first and then the meat/ vegetables are added. With Biryani, it is the other way around. Hope, this clears the air.

    How does this video settle that I didn't get as veg biryani is sold all over India but u can't get away from. The fact veg biryani is an evolved food just like when we mention sushi we first think of fish n Japanese food but in India u get veg sushi too..... So it's just demand b supply n ppl s zest for change n craving for trying something new leads to fusion n evolution of foods n veg Biryani is one such evolution n purists might not accept it which is correct too in a way but of course pulao has a different flavour altogether

    When you make paneer with the soya milk its tofu
    And when you make tofu with milk its a paneer

    I was astonished to see romali papad and in authentic hyderabadi cuisine there is no concept of veg briyani..... Authentic hyderabadi Biryani means it has to be chunks of mutton pieces to be there and not even chicken. Pulao is made in absorption method whereas biryani is made in drainage method. 🙏❤️

      Yeah, then chicken biryani is not real as well. But, the truth is there are now different variations available of the original dish (which is mutton biryani, as you say) and one of the varieties is a vegetarian option. That doesn't make it unreal.

    In Hyderabad when you use a word biryani.... Automatically people assume its non-veg biryani. :)
    And yes technically biryani is non-veg, I'm not saying but google says so...xD
    We Indians mix this that and name it anything we want... So when a veg lover craves for biryani and they make it with mixed vegetables and call that biryani.
    Anyways some call it pulao, some call it biryani... At the end we all want some good food. Happy Fooding. :D

    A experience tip,
    Use Cooker for Veg palav but don't use Cooker for Biryani.

    I like devid but he is not good as u because he always says oh luv this food but on other hand if u dnt like the food u tel n u describe abt food it's amazing..so u r the best IVANA not Devid but I like her he is good food blogger..n luv the biryani. Tek care 🙏 luv ur vlog n.
