Brilliant! Such a simple yet effective linkage. Much better than paddle wheels for small boats because there's less mass above the gunwale, less windage, and the view isn't blocked as much. It also looks like you can experiment with the angle of the paddles during the catch / power / release phases of the stroke by changing the geometry of the frame.
One thing we did experiment with was the rotation of the paddle around the paddle-arm axis. By having both rotated oppositely it was possible to rotate the canoe by pushing stronger with one paddle than the other.
I like it, looks like it doesn't splash you as much as the paddle wheel kayaks. Less obstructed view too. Now I have two options to consider before modifying

I would love to see you bring the Centre of mass forward to bring the bow down and use the full hull speed. Maybe move forward or put some weight on the front. It would also be amazing to somehow change the geometry of the paddle so you could utilize differential steering, maybe check the valve gear on old steam locomotives for inspiration. Keep it up!
Seems like the power stroke is just a bit off due to the simplicity of the build. The feet are inline with the paddle position. Looks like the pushing leg is late pushing hardest as the paddle is ending the stroke.
