Another fun fact for people like me who are deathly allergic to cinnamon, I can eat cassia! My doctor said I just need to be really careful and make sure I don't start developing a allergy since it's in the same family. Absolutely right...this cheap cassia tree bark sold as cinnamon is not really healthy. Unfortunately, it is used pretty much in every spicy Indian dish like biryani, chicken gravy etc. This combined with cloves gives you that rich taste in all spicy Indian food. China or Vietnam where the fake Cinnemon from Cassia tree bark is made. Real Cinnemon is made from bark of Ceylon plant, which only grows on remote island of Sri lanka. Ceylon is much smaller plant than Cassia is, more like a bush. I actually like the cheaper substitute to "real" cinnamon. I like them both, but maybe it's just that i was having cassia the vast majority of my life and associate the actual cinnamon with artifical candy flavoring rather than a tasty apple pie or cinnamon roll.

Well just to make it clear, the word "fake" is a bit misplaced here. There are simply multiple types of cinnamon coming from different trees but they belong to the same family (Lauraceae) and the same Genus (Cinnamomum). However the one that was first used to make Cinnamon was named Cinnamomum verum, which basically means "true" cinnamon, which is probably where this whole idea of "true" and "fake" cinnamon comes from. True cinnamon is also the Ceylon cinnnamon you talk about The other cinnamon that is sold the most and produced in China is Cinnamomum cassia. Now you are definetly right that people should pay attention to what cinnamon they buy, because Ceylon cinnamon is indeed healthier, while the Cassia cinnamon contains quite a bit of cumarin, which can be pretty toxic. If you really want to nibble away at the tree, the best parts are the roots. We used to dig them up and eat the roots straight from the ground. The taste is so intense that it can feel like eating a chilli. Also, you can scrape the roots, dry it and smoke it. The flavor is quite strong. We never bother with the stems as they are mild compared to the roots.

I was taught the more respinsible growers/harvesters take bark off branches, not the trunk itself. Cause yknow, taking away a tree's bark kills it basically if it's done like how it was in the video. So... branches, not trunks.

@karenkrohn8003 I did some reading & apparently it takes three months for the cambium layer to grow back and 1 year for the bark to grow. The cinnamon tree can be harvested every two years.. It seemed a really strange process to me as well. But now we know!😅🤣

You cut the trunk and it regrows many branches in a circle around the stump. the branches then have a lot of bark.

Americans need to be careful because cinnamon can be toxic in high doses unless it’s Ceylon cinnamon. A lot of European bakery use Ceylon cinnamon due to it being less toxic and a better flavour.

I like cinnamon in some things, but I can't combine it with apples in any way. Not in apple sauce, whole apples, cereals with apples, or any kind of apple and cinnamon products. For some unknown reason, this combo upsets my stomach. It's crazy because I like and can eat both without a problem, as long as I don't eat them together. I've had this weird problem since childhood. A nice fact about both of them is that they can be eaten without guilt, as they both have health benefits, and without being fattening. As another commenter mentioned, though, don't go over board on the cinnamon, as high doses are mildly toxic. For the record, so are a number of other foods. Real black licorice is bad in high doses, potatoes are toxic when raw, but safe when cooked. There are plenty more potentially harmful foods out there. Eat them in moderation, and cook them if necessary. Fun fact: even plain ordinary water is toxic in high doses. It throws off your potassium and salt balance, and yes, that can kill you. Fortunately, it takes a lot of water to kill you, but people do occasionally OD on water.

Unfortunately, it is used pretty much in every spicy Indian dish like biryani, chicken gravy etc. This combined with cloves gives you that rich taste in all spicy Indian food. All that burning sensation and acidity problems are caused by these two spices...

I actually like the cheaper substitute to "real" cinnamon. I like them both, but maybe it's just that i was having cassia the vast majority of my life and associate the actual cinnamon with artifical candy flavoring rather than a tasty apple pie or cinnamon roll.

The "cinnamon" sticks and powder are a completely different plant because it's easier to maintain and tastes similar, but there is a noticeable difference in taste. This is important to know because a lot of home/natural remedies that use cinnamon only work with real cinnamon. The conversion happened 60-70ish and ever since, 80% or higher of what you get in the store is not actually cinnamon.

There are simply multiple types of cinnamon coming from different trees but they belong to the same family (Lauraceae) and the same Genus (Cinnamomum). However the one that was first used to make Cinnamon was named Cinnamomum verum, which basically means "true" cinnamon, which is probably where this whole idea of "true" and "fake" cinnamon comes from. True cinnamon is also the Ceylon cinnnamon you talk about
The other cinnamon that is sold the most and produced in China is Cinnamomum cassia.
Now you are definetly right that people should pay attention to what cinnamon they buy, because Ceylon cinnamon is indeed healthier, while the Cassia cinnamon contains quite a bit of cumarin, which can be pretty toxic.
But still, just because ceylon cinnamon is healthier doesn't mean the other cinnamon is "fake". It is still cinnamon.

If you really want to nibble away at the tree, the best parts are the roots. We used to dig them up and eat the roots straight from the ground. The taste is so intense that it can feel like eating a chilli.
Also, you can scrape the roots, dry it and smoke it. The flavor is quite strong. We never bother with the stems as they are mild compared to the roots.
The leaves are tasty as well.

It’s not that they’re shocked by eating something that came from a plant. It said they’re shocked that they are damaging the tree by removing the inner bark which can harm the tree. Lots of other plant products like fruits, vegetables, tubers, etc. don’t actually harm the plant when harvested.

Yes, surely they would want more than one harvest per tree. Girdling a tree by removing even a narrow a ring of cambium will kill the tree-- unless these are highly unusual trees somehow?
@karenkrohn8003 I did some reading & apparently it takes three months for the cambium layer to grow back and 1 year for the bark to grow. The cinnamon tree can be harvested every two years..

You cut the trunk and it regrows many branches in a circle around the stump. the branches then have a lot of bark.

Cinnamon tree is much smaller and has a thinner bark. tastes less strong and has nice floral notes. Cassia mainly comes from China and other east asian countries and real cinnamon comes from Ceylon (Sri Lanka) and some other south asian tropical countries.
I like cinnamon in some things, but I can't combine it with apples in any way. Not in apple sauce, whole apples, cereals with apples, or any kind of apple and cinnamon products. For some unknown reason, this combo upsets my stomach. It's crazy because I like and can eat both without a problem, as long as I don't eat them together. I've had this weird problem since childhood. A nice fact about both of them is that they can be eaten without guilt, as they both have health benefits, and without being fattening. As another commenter mentioned, though, don't go over board on the cinnamon, as high doses are mildly toxic. For the record, so are a number of other foods. Real black licorice is bad in high doses, potatoes are toxic when raw, but safe when cooked. There are plenty more potentially harmful foods out there. Eat them in moderation, and cook them if necessary. Fun fact: even plain ordinary water is toxic in high doses. It throws off your potassium and salt balance, and yes, that can kill you. Fortunately, it takes a lot of water to kill you, but people do occasionally OD on water.
