You can increase throttle before you launch. You just have to have the bar up.

To catapult on mobile, you would have to do the same thing but instead of pressing keys you press hook and then when your 100% throttle click carrier launch

Tf you talking about USS Gerald R Ford and all the other Ford class aircraft carriers use electromagnetic catapults there is no steam unlike the Nimitz class and previous

They're currently remodeling the F18! Hopefully they add some quality of life stuff at the same time too. I wish they made the hud items built in, so when you're falling you tap a button for parachute, or click space. it would make the game much more polished.
