I can’t travel to where you are but hearing and watching you make the yummy food makes for a very satisfying video. I’m surprised that I need to keep these in the refrigerator it seems like they would be canned up/sealed and go in the cupboard. I love your pot with its wooden handles it’s very pretty and we cook on the same kind of stove. Squeezes :-)
I love this idea. There are lots of 'windfall' apples right now in Ireland. This is a great way of preserving them, and keeping them fresh to use in late Autumn. What can be tastier than a succulent apple pie and custard for desert in a cold and winery day in November. Many thanks for the clarify with which you make your visuals.

I really like this idea. You did a short water bath method. I would like to keep the apples on a shelf. The lids you use cost more here in the states I use rings and a flat lid. Keep giving out good recipes and ideas. Anita from Colorado Springs, Colorado
I like this idea, but I think she filled the jars too full to create a vacuum for a good seal. I might try this though, but not fill the jars so full and leave room at the top like I do for my other water bath canning.
In Deutschland kaufen wir nicht extra Gläser zum Einkochen, sondern benutzen die Gläser wo vorher Bohnen, Gurken, Marmelade etc. drin war. Gibt im Supermarkt vieles in Gläsern zu kaufen, alles Gläser, verschiedene Größen.

I wish she would have mentioned this is not for long term storage. This is not the water bath method to store on a shelf. It does have to be stored in the refrigerator.

My mom was born in 1921 and was a depression era baby. Her mother used to do this (canning) as a w a u of preserving foods that were in season or scarce, to enjoy at later times. I used to help my mom put up apples like this as well as pears, apricots, plums, tomatoes and her soup fixings (okra, corn & tomatoes).

If you want to prep apples for room-temperature storage, you could get a Ball Blue Book, which has instructions for canning safely. I can no-sugar applesauce each year and store at room temp, but there are guidelines.

@@amyphilyaw1820 Hi there I suppose she says it has a self life..I’m no expert as I have not made fruit preserves…….But I know the sugar content would have to be high so that the fruit would not get to mushy ……I do know that if making lets say orange peel or lemons etc so that it maintains it’s shape and life, the sugar content when cooking is almost a syrup. this hardens the fruit…I suppose you could follow her recipe and store it in the fridge if after four weeks or so the fruit is too mushy may need more sugar and I also feel that green unripe apples are best..

To be shelf-stable, canning fruit like this isn't the way. The jars would need the lids to have an airtight seal, and that can only be accomplished if the jars were to be boiled while submerged in at least an inch of boiling water. These jars, with those lids, were not appropriate. That's why she said they should be stored in the refrigerator.

I love this posting. The lemon juice prevents the cut apples from changing colour. Lemon/lime juices squeezed upon avocado also has the same effect including placing half a lemon in the saucepan one cooks green bananas, Irish potatoes, sweet potatoes plantains yam, edoes among other fruit or vegetables that tend to chang colour once peeled or cut. Also to neutalise salted fish from smelling, cut a whole lemon or more (depending on the amount of fish being prepared/cooked, of and squeeze the juice into the cold water or boil the lemons together with the salted fish . Trust me there won't be any lingering smell of fish .in your kitchen at any point of its prepartion or cooking... thebkemon also prevents yiur saucepan being stained.

Yes as long as the lids are sealed they do not need to be refrigerated. To be on the safe side add a tablespoon of lemon juice

Yes.. my mom would dissolve the sugar in hot water & pour over fruit when cooled. It makes a light syrup. Then heat in jars & cool to seal

This is NOT shelf stable. She said to store in the REFRIGORATOR.

Any acid will work to minimize oxidation.

Można robię tak od dawna i są bardzo smaczne.
Děláme tak i ostatní ovoce, třešně, hrušky, jahody,broskve, meruňky, borůvky, na ty nedáváme vodu, jen přesypat cukrem. Ve sklepě vydrží kompoty i několik let. Zdravím z Moravy (Česká republika)

You don't drain the water off. The apples are now preserved.
Do you have to tighten the lids down after they cool? Or do you just hand tighten when you cook them and that's all?

lids very well.

Just hand tighten them before you heat them. When they are cooling they will seal tight. If you push the lid after & it pops it isn't sealed
