I like to fix my ribeye steak on high heat and finish in the oven. I like med or 138℉-143℉. Then let it rest for 30 minutes. You can try another method, Sous Vide. Sous Vide is the ideal way to cook a ribeye steak for perfectly even edge-to-edge cooking with great flavorful results. Sous vide ribeye steaks can be finished in a pan or on your grill.
