Tips: I replaced the whipped cream with egg meringue recipes.... because I don't want to waste the white eggs... mix and measure egg meringue with the pastry cream.. base on the consistency fillings that you want...

Pasteurisation also destroys lipases (enzymes) which can affect the flavour of the cream and reduce its shelf life. As long as you put it in the fridge it will be safe to eat.

its best to keep them unfilled , put in an airtight container, if you filled them with cream you should put them in the fridge, you can keep them in the fridge best to be eaten within 3 days

I have to transport these to a party, and I'm concerned about them getting separated(tops and bottoms). And also, maybe that would keep the filling from running, in case they got too warm before they are eaten? Thanks in advance.

Yes cause they need to dry out inside and for the crust to stabilise, sudden drop of temperature will make the shell collapse

Preheating the oven longer than 10 minutes , very high heat at at the start will help you crisp up the choux

No , as soon as the baking time is over just turn of the heat and leave the puff pastry in the oven with the door slightly ajar for atleast 15 minutes

I made the pastry a day in advance and the filling but only put the filling inside just before serving them. Never tried freezing them though
Go to your local store bakery and ask. I know ours has to. The pastry cream is still frozen when they sell them.
