Man, you guys are lucky that you can dig like that. If we want to do that in my state, you gotta call the gas company/ water authority/cable company and have written permission from the homeowner, and any lines or property you damage are your responsibility to repair.
people just don't notice something is wrong. intill it backs up into the house or the smell gets strong. two places i lived had a tell, you would hear the the kitchen sink bathroom sink or bath go glug every so often. other sighn is waste or water on ground around the gully or the water level in toilet bowl going down slower than normal or pulling its water out. at one place i lived when using toilet could hear water running under floor two weeks before that i noticed sewer smells from under the the house should have investigated it then.

Most his work show truly terrible layouts most time but that's probably why he is getting those jobs. There is well operating drainage systems that are well laid out with proper access you just don't get to see them.
