Ingredients:
1 tbsp olive oil
20g butter
1 tbsp flour
600g Swiss brown mushrooms
1 onion, sliced
2 cloves garlic, chopped
2 tbsp Hungarian paprika
½ cup white wine
1 tbsp tomato paste
6 sprigs thyme
500ml vegetable stock
2 tbsp sour cream
1 tsp Worcestershire sauce
2 sprigs of parsley, chopped to serve
Fresh pappardelle pasta, buttered, to serve
Salt and pepper
