    You'd have to cut each slice into one-bite cubes. Otherwise they just cut the slice and see the pink.

      That's why I like hibachi steak the best, you get maximum crust and no chance of an underdone center.

    I come from a family that doesn't like medium rare, my trick after I cut up the steak is I place it in a bag and sous vide it at 130 for about 10 to 15 minutes. It will not get it as brown as this method, but it doesn't look rare afterwards. I found this out by accident, while trying to make sure the meat stayed warm until everyone was ready to eat.

      I usually make too much steak and have to eat it the next day but I've air fried or reheated the steak with different methods and it usually kills the color but the tenderness keeps decently well. I think using a sous vide does a similar thing. A lot of clever and simple ways to accommodate for folks who don't find the pink in meat appetizing.

      I have a different trick.. The people that want well done get thinner steaks. That way, you don't have to cook it forever and lose all the fat from it, and it'll still be pretty good to eat.

      I cook medium if I expect leftovers, otherwise I personally do medium well to well done. The key is to have a good quality steak. Some marinades can help with the time tenderness as well. A quick sear then a lower heat to cook is the way to go. If you're pan cooking, you can add water to keep the meat moister as you cook.

    I was inspired to cook a steak watching your videos. I followed some of your tips, and a couple from an Australian Beef website, and for the first time my steak was perfectly cooked, medium rare. I was ecstatic.

    lmao, this is the first time I can remember Guga saying "and this one is as easy as it gets" and it is actually is an easy side dish. Normally after he says that he breaks out his chemistry set and creates a new enzyme(yes, obviously I am exaggerating) and then ends with "see it's that simple". I love these videos!

    I was raised to eat steak well done. It wasn't until my early 20s working as a waiter ( cliche I know) that a coworker jumped me by essentially shoving a bite of steak in my mouth without me seeing it. She then laughed at my reaction because it was the best steak I've had in my life. I learned that I had always been eating "burned" steak and now order between medium rare and medium. Now if I screw up and end up overcooking my steak I can barely stomach it without steak sauce.

      I've been there, in my household steaks were cremated and then covered in A1 sauce to be able to get them down. I faced dirty looks from waiters for ordering medium-well and for requesting sauce. These days I cook them to barely medium with enough juice not to need any sauce. It's so much better!

    While I fully enjoy my steaks medium rare, I cannot get behind tricking anyone into eating something that they have said they don't like. If someone likes it well done, they get it well done. We may not agree but I wouldn't ever force my tastes on them.

    I have used that method also, but instead of the pan, I put it 2 min into 400F of the air fryer, does the same result, but definitely this method is better, since more flavor!

    I appreciate the content truly, and I love your channel Guga, I've been a fan for years and I love your recipes.
    I am a staunch believer that there is really no good reason to trick anyone with your cooking.
    There is something so ingrained in the human experience that when you feed someone something under false pretenses, you will be met with revolt and hurt. They will feel betrayed, not appreciative, even if your intentions were benevolent.
    I agree that well done is over done, but /tricking/ people when it comes to food is hostile.

    This is actually one of my favorite ways to fix steaks. Especially tri tip or picanha. Something really thick that I sous vide to medium rare, torch sear, then slice and sear the slices. Every bite is loaded with that maillard flavor.

    I've done that with my father many times. Thought I was pretty smart. Thinner slices work better, just changes the color, doesn't change the "structure" of the meat.

    I like mine well done. But to make well done WELL done and not simply overcooked takes a lot of practice and def not every steak is meant for it.

      There may be a fine line where all the pink disappears but some juices still remain. But only sous vide would achieve it. Either that or the cut has a lot of intramusu fat and it doesn't matter if you cook it well done. Wagyu A5 as shocking as it may seem is as good mid-rare as well done.

    I love the plan there! I was a well done purist early on, but in my mid-20s a coworker convinced me to try cooking my steak that night medium rare, and I tried it and have never gone back. But I will say... just be cautious tricking people with this one. There are some people who can't have mid-rare for health reasons. But otherwise, an awesome way to get people to try medium-rare who just don't like it.

      I've never tried med-rare since I'm afraid of the meat not being the best quality possible, but I've couraged up to ordering a medium well once (and in my family all meat is always well done, however, not burned) and I didn't have any special sensation from the pink part in the middle... So, to me, the risk isn't worth it. I might go on and try a medium one day, but who knows

      @@atriyakoller136 The "risk" is imaginary. Unless you have a disease that compromises your immune system, it's extremely unlikely that you would get sick or feel any adverse effect from eating the steak completely raw, let alone medium-rare. When was the last time you heard of anybody getting food poisoning from meat? You're much more likely to get sick from lettuce. Millions of people every day eat steak tartare with no issues.

    Steaks cooked longer are good for different reasons. They’re not as tender or juicy, but they have less gummy texture, aren’t as cold, and have more roasted flavor. It’s like how you can enjoy both raw apples and cooked apple, even though they’re different.
    On another note, many people naturally associate pink and red steaks with bacteria, so just can’t enjoy them even when they’d like to.

      The roasted flavor is from the outside. The pink and red is not an issue with steaks . It's different and more important with not cooking Pork and chicken long enough, that can really make you sick.
      You can even eat very fresh beef meat raw like tartar. Just like you can eat certain fresh fish raw.

    You can cook steak well-done and still have it juicy and flavorful if you know what you are doing

    It would have been nice to see an actual well-done steak to compare both to. Just leave one of them in the oven to another 10-15 deg F past the medium rare. With reverse sear, it can stay surprisingly moist and tender. Problem is, most people who try to cook to well cook significantly over well and/or do it over such intense heat that it ruins the steak. Well done can be well-done. It doesn't have to be leather or charcoal.

    You should do a comparison of season before or season the board when you rest it after you cook. I have tried it and gotten good results by only salt first and then add seasoning after.

      you mean salt the steak -> sear -> butter + aromatics -> basting -> take it out to rest -> while resting season with pepper?
      or what is your usual method ?

      Salt and cook however you prefer. When it is ready to pull, season the plate or board or whatever you rest on with whatever you like. The juices from resting mix with fresh not charred seasonings @@Falkeshy

    This is similar to what I do. I cube my sous vide steaks and give them a quick toss in the wok. Nobody assumes they're medium rare at all

    for a lot of people that like well done steaks, it's not the color its the texture. while i have eaten steaks at all degrees off doneness, filet is the worst for me as even at well done temps its still too soft for me. however i will say that the best steak i ever had was a very rare steak called the Melbourne from Outback or Longhorn steakhouse in the mid 90's but i prefer med to well.

      I know that for some people I know, it's genuinely a health thing. If my girlfriend eats a steak that is not well done, she gets an absolutely awful stomach ache. I've learned to really just not judge what temp someone likes their steak. If they want well done, that's cool. If they want medium rare, that's fine. The right way to eat a steak is the way you like it best.

    You can never trick well done eaters to eat anything less than cooked, they’re gonna taste the slightest liveliness of that steak even if it looks burnt

    My experience is that those who only eat well-done steaks, will take one bite and spit it out. 1st issue is the colour. 2nd, is the texture...they dont like the soft "medium rare" texture. The only way is to use ultra-premium steaks, cook it to death, and hope it is still tender. This means you can't use subpar steaks, only the best or it's inedible. You can't hide subpar-quality steaks when it is well done. 😅

      It's the texture for me. I can eat medium-well, but anything less and I'm immediately disgusted by the texture. Texture issues are so annoying. I have texture issues to the point that even if it tastes amazing I will be physically unable to make myself eat it if the texture is 'wrong' to me. It sucks hardcore.

    I used to do this for the kids …but the rest of the family caught on…and had to slice it to even smaller bites. I can tell one of the kids likes medium rare but only a few bites here and there

    Guga should do a truffle experiment. Imagine steaks coated with black truffled compound butter. Maybe it even ressembles dry aged steaks

Never in my life have I had the audacity to turn away food a host has provided for me, if you bring that kind of disrespect into my house you can expect to be asked to leave. You can be damn sure that if you served me a burnt steak at your dinner table, I'd eat it with a smile and ask for seconds. Reciprocity is what I ask for.

    I like my steak medium-rare. However, there is no "best way" to have steak, Guga! If you're cooking steak for someone, the correct way to prepare it is the way they want it. If they want a hockey puck, fine. If they want it raw, fine.

    Last week I tried tenderloin and rib eye cooked on a teppan. To my surprise, these weren't served as steaks, but stir fried and sliced in squares. When I bit it, it wasn't the texture of a well done steak.
    I wasn't in front of the teppan when they prepared it, so I was shocked at first. They didn't even asked me the doneness that I preferred.

    I smoke cream cheese all the time. It’s always the first thing gone at a gathering. Little Chief Smoker doesn’t get hot enough to melt it. And it’s delicious.

    This technique you can also apply in Stroganoff sauce, so dip the medium raw steak in hot Stroganoff sauce, you get a bit the same effect, my mum did this, and I do this now too, it's delicious, Probably you can do this technique with any sauce

    I did this trick after I got married many moons ago. My wife didn't like seeing the overly pink and thought she only liked medium well to well done steaks. After a while, she finally asked me why my steaks were better than restraunts. That's when I came clean and she's now a medium steak girl. I can't quite convince her to fully go medium rare but at least it's not dry rubber.

    I think if you from a culture where medium rare is most common then you will like it that way. I from Hungary and i preffer well done, because it has a better texture for me. (Yes i ate medium, medium rare, and i even eat raw) My favourite meat btw is the pork. It has the best tasing fat, also the best texture. Also the chicken liver is my second best.

    I used to eat well done but due to some health issues, it convinced me to change my food diet and switch to medium well. I've tried medium rare before on accident and the texture just threw me off. I couldn't handle it.

    Admittedly, I'm someone who has had steak not well done but closer to well done based on the warnings regarding consuming raw or undercooked meats. Thanks to your videos, I'm getting to the medium rare steaks, while I go medium for burgers.

    i wish someone would've done that for me when i had my "only-well-done-steak"-period.
    for me it was because i were to a lot of bad home-cooks and bad restaurants where they all served steaks that were bleeding and at the same time they felt like rubber when chewing.

    I'd been doing this everytime to trick my mom, she doesn't like medium rare, but I am too lazy to double cook the steak for her so I just do this, works like a charm specially when you do thin slices or cut bite size and she says "so juicy"

    You dont fool anyone since its about texture. For the most time i had even trouble eating medium steaks.
    Dont get me wrong, it looks absolutely delicious, but when i have it in my mouth it just feels like goo and trying to eat that is unpleasant at best. I kinda blame my parents for that since they always prepared everything well done.

    hey guga, you should try some white honey instead of the old bear bottled stuff. trust me, it’ll be like the honey version of going from butter to bone marrow. you can spread it on toast too if you want something sweet instead of savory 😉
