Just a word to anyone thinking to try them out, please follow directions, melt and completely COOL the butter before continuing, it will make all the difference. This batter is so fantastic you can use it for chocolate chip cookies as well. Made these last night and wow, they are fantastic. I'm not usually a fan of soft cookies (too cakey or doughy) but these are delicious with a just-right texture. (and great for breakfast too!)

I have a great tip for cookies for if you don’t want to use a cookie scoop to portion out your cookies. Shape the whole cookie dough into a log & then use a bench scraper & cut it into coins & roll each coin into a ball & then flatten them out if you wish & then you can bake them. That is a great method to use if you don’t want to use a cookie scoop cause sometimes, when you push the trigger button, it takes a few pushes for the dough to come out onto the sheet pan. What do you think of my tip for people who don’t want to use a cookie scoop or don’t have a cookie scoop?

Thank you so much! The best way that I have found to freeze cookie dough is to scoop out the dough balls, wrap them individually in plastic wrap and then store those individually wrapped balls in a freezer bag. :)

Sam, I made these cookies tonight and they are absolutely fantastic! A keeper recipe! I used the chocolate coated toffee bits, but just realized I forgot to sprinkle on the sea salt! Next time! I have a question: what is the purpose of the corn starch? I have not seen corn starch in a cookie recipe before. And are you using the medium cookie scoop? 🥰

I haven't tried using dates here. I would think coconut sugar would be a better bet here, but I haven't tried that either. If you do try it, I would love to know how it goes. :)
I thought so too and tested with brown butter but found the flavor did not shine through! I was shocked (the dough was delicious but didn’t carry through when baked). Gave it to a dozen taste testers compared to the non brown butter version and the non brown butter won out. I think it was a first! 😂🤯

You could substitute almonds for the pecans. You could probably add about a cup (170g) of chocolate chips. :)

You can use flour instead you will just lose a little bit of the softness/chewiness of the cookies. :)
