- A small and humble shout-out to the people of Myanmar - a place that influenced me, encouraged me, and awed me with their example of perseverance and their love of peace, in the face of so much hardship - I want to dedicate this video to you.
I live in Thailand, and have been grateful of this fact since the day I first came in 2009. That does not change the fact however, that I frequently have those "what if" dreams (daydreams of having 3 (at least) entire other lives to lead, ones that would see me loving Myanmar (and Laos, that's the 3rd country...) - other lives that may have seen me speaking Burmese instead of Thai, learning about those beautiful people and calling that land my new home, possibly loving them as deeply as I have come to know and love Thailand... At least I DO have the chance to touch some of that culture in the wonderful diaspora population that has found its home in Chiang Mai.
Of all the wonderful Shan (who are 'Tai Yai' in Thai language), Karen, Mon, and of course central Burmese people I have had the pleasure to meet here in Chiang Mai, I have been SO moved by the story of this Auntie, and its a pleasure to share this afternoon at her house with YOU today.

WHAT TO ORDER:
Every dish on the menu is the same price (40 Baht), and I recommend at least the 2 main dishes - the rice starch (or the lentil starch mixed in with it if you want), and then her version of 'Nam Ngiaow.'
**I did come back here 24 hours after visiting with Li, I came back with Brock and Caleb (and Jeremy joined us as well!), and where Li and I ordered 6 dishes between us, I think the next day we had 9! I could even happily go back today as well, Auntie's noodles (and her FIERY chili dip) just can not be beat!!!
Thank you so much for supporting Myanmar. Having lived in Mandalay for several years and leaving our home and friends has been so so hard. Every day we miss Mandalay and the amazing welcoming people. Moving to Chiang Rai and being able to taste Myanmar in the local kitchen here is so comforting. Because yes... its amazing!! Thank you for sharing the love. One Love One Heart.

Thanks for visiting Burmese stall. Khao Swe is a Burmese noodle. In Burmese language, “Khao” means fold, and “Swe” means pull. As noodle is made in a process of folding and pulling, We have various types of Khao Swe dishes, like Shan Khao Swe ( Shan noodle), Ohn noe Khao Swe (coconut cream noodle), Khao Swe kyaw( fried noodle), Cechat Khao Swe( garlic oil noodle), Khao Swe atho (Noodle salad, which is popular in India) . Moe pyan Khao Swe( sky fly noodle). Phan thay Khao Swe ( Chinese Muslim noodle)… and so on.
The dishes which you ordered from that stall, mostly are Shan food.
99% shan food except Khao Swe Atho and Pae Kyaw which is Burmese. Tofu Nwe Khao Sew is best to eat with You Tiao..
Cannot WAIT to visit again of course, but for now I feel so blessed to be able to hang in real life with people like this, AND be able to connect online with new friends like you. Thanks so much!

I love the idea of a cold noodle "salad"! You were not skimping on that wonderful hot chili oil either! Oh, hey! This place is REALLY close to one of my favorite Khao Soi places, too! (Khao Soi Pa Pai!) Really good to know about it!

Sabaidee Joel! SAAP SAAP! SAAP LAI!!! Those noods look so good. I’ve never had Khao Fun Cao but I can imagine the flavor. The Khao Fun Poon reminds if you let Khao Piak Sen congeal. Lol. Appreciate the comment about Burmese and Lao food being underrated. One of the things that caught my interest in Anthony Bourdain was him showcasing Laos. It was like a "Wow, he knows about Laos?!" You don't see many "foodie" personalities talk about Laos. Awesome video my guy!

Love the look of that porridge style dish but I'm assuming it's because I'm porridge obsessed and prefer savoury porridge to sweet. Thanks for speaking out about the current political situation in Myanmar , Joel. I myself was born and raised in Shan state in Myanmar and having the Tofu Nway ( the porridge style yellow bean ) as breakfast and the solidified one as afternoon snacks.I will like to suggest eating the Tofu Nway when it is hot for its best authentic flavor. If you let it sit, it will coagulate and hard to mix with the noodle. :)

In Myanmar those plates are called shan yay, shan thoet n Tofunway. Sour is called yangon people like ( mone nyin chin.).

I'm Laotian (I'm an American now) and I speak Laotian as well though I'm illiterate (can't read or write). I always find it a nice challenge to see which words are familiar. Thai and Lao are very close so I'm confident I can get by in Thailand. I'm sure I can get by either ordering or asking questions to Pa Nang. Either that or bring my dad who is fluent in multiple Asian languages lol.
