Dal Puri - National Dish of Mauritius (Day 80)

    100g yellow split peas, soaked in water overnight with 1 tsp ground turmeric 700ml water.
    2 tsp ground turmeric
    250g plain flour
    3 tbsp vegetable oil, plus extra for frying pinch of salt.
    ��Drain the yellow split peas and place in a large pan with the water and ground turmeric; bring to the boil. Cook until the peas just start to break up, about 25 minutes. Drain the peas, reserving the cooking liquid, and place the peas in a food processor or blender. Blitz until you get a very fine paste.

    Put the flour, oil, salt and approximately 150ml of the reserved cooking water into a large bowl and mix together. Knead until you have a pliable dough (you may need to add more water) and then leave to rest for around
    20-30 minutes in a pre-oiled bowl covered with a damp cloth.
    ��Once the dough has rested, pull off a piece of dough the size of a small plum and roll into a ball using the palm of your hand. Push a small indentation into the middle of the ball and add a teaspoon of the yellow split pea paste, cover over and carefully form back into a ball. Using a rolling pin, roll out the ball into a circle about 15-20cm in diameter.
    ��Heat a skillet or large frying pan to smoking and then use a pastry brush to brush the base of the pan with vegetable oil. Place the rolled-out dough straight on to the pan and allow to puff up and reveal lots of air pockets - this will take anywhere between 30 seconds and 1 minute. Flip the bread over and repeat on the other side. Continue until all the bread is cooked.
