- This is what aged cheese is all about! We just cut open a very old block of cheddar cheese and what is on the inside shouldn't surprise you, delicious cheesy goodness! This is the cutting of our celebrated 20-year-old cheddar!

Never been, but I've always had a fondness for the New York sharp and the Vermont extra sharp.

It’s costly to keep cheese in climate- controlled conditions, plus, each passing year means your inventory is sitting on a shelf.
That’s one reason Parmesan Reggiano is so expensive.
The finished product has to be sold at a price high enough to cover the years of costs it racked up.

Cheddars this old have quite a bite and tang to them, and they are crumbly, not smooth and creamy like mild cheddars. The sharper the better, in my opinion

Loved the video. The hypochondriac in me has this question: Isn't it safer to remove the rind before we start cutting it so that we can avoid having pathogens or even plastic matter transfer?
I thought the same thing, but it wasn't a rind. He said it formed sugar crystals around the outside, so as nasty and slimy as it looked, I guess he wanted some of the edge. Maybe it's more flavorful like burned edges of meat 🤔

Curious how long can a cheese be aged can it be still good at say 30 years when can it be the best and then when can make you want to vomit the difference like when is the best to age a cheese for and when is it not it's what I'm saying
I don’t think there really is a best year to age cheddar. It really just depends on how much sharpness you can handle. I’ve heard of 40 year old cheddar being eaten. The cheese doesn’t really ever go bad if it’s stored correctly.

Unfortunately the word Sharp seems to be more of a marketing term, have yet to find a truly sharp cheddar that is available for regular purchase. No doubt this here is sharp.
