We live up north and tend to catch a lot of salmon species. We made your sausage last week and wow was it fantastic? We used wild red salmon and put it into a 32mm casing, smoked it for about four hours with apple wood and hickory mix. Sausage had a nice mild taste of the salmon and spices. I’m always looking for things to do with salmon as I have a freezer full of it. I truly thank you for sharing your recipe online and look forward to future videos.
We have a Vacation cabin/cottage on the West Coast of Vancouver Island... we have been making salmon pepperoni usually from the pinks for many years 20+ years actually, everyone loves the "salmaroni". Never really experimented from there but after seeing this we will most definitely try some new recipes with our Rock cod, ling cod and maybe even halibut.

Thanks for the video Eric, we are a fish downstream processing that deal mainly with tuna, we have alot of tuna in our waters and we do smoked tuna, minced Tuna, tuna pickles and now we would like to try sausage tuna, this video has given us a broad idea on how we would do our tuna sausage, once again thanks alot 😍🙏🏼
Oh wow...yeah, going to try this for sure. Rockfish/Ling for certain, probably try Kokanee because they are so tasty, and trout because finding a good use for them wouldn't hurt. Dungeness crab could be really interesting, but no idea what that would look like. Probably need some rice as a vehicle and not sure about curing it.

my fish sausage is more a seafood sausage, where white meat fish does the bulk, but flavour wise i use prawns, molluscs and crab meat. absolutely delicious!
Being that I am in NW Florida, I'd use either gulf mullet or Spanish mackerel. I'd imagine a a crawfish etouffe sausage would be wonderful. The trick would be to make the sausage mix first, and then combine with rice, right before stuffing.
It's about time for me to make a clean out the freezer sausage and make room for some deer meat. I have to put the replacement ears in my stand mixer which I also learned how to do compliments of this fine feller
Years ago, I made a "Fish and Chips" sausage (fish, fried potato, and fried fish batter 'cracklins'), and it was probably the worst eating experience of my life :) The fish was wholly over-processed, and the 'cracklins' turn to a gummy mush. I'll try this version next time!!!

I would use striped bass (my spouses favorite), or since you have lime in this maybe go shellfish with scallops or shrimp. Can you put tequila in sausage? That would go with the lime as well.
These would be considered a fully cooked sausage. Freeze thaw and eat, with no further cooking necessary? For make ahead. Either way some grill marks would be in order. 👍👍👍 TYFS
My first thought is alligator gar. Nice, mild, white meat. But it can have a bit of a chew at times. Think the grind with some pork fat would make for a treat. Mesquite smoked of course. It's my native tongue. White bass and cat fish would also be options for me. Now I'm wondering what jalapenos or hatch chilies would bring to this 🤔
I noticed that you have used potato starch as binder in a couple of this years episodes. Previously you used milk powder. Is there a significant difference or are they interchangeable? Thanks.
Yeah, I like to mix it up. There's a slight difference in the binding capacity. I find that potato starch binds better but they both work and can be interchanged at the same rate. The milk powder does give the sausage a slight creaminess though (which can be desirable)

Wow looks insanely good! I am a huge fan of Asian fishcakes - I imagine the sausage tasted a bit like them (without the overwhelming sweetness maybe😄) I wonder how the texture would be with rough squid and shrimp chunks inside the sausage

Any fish that doesn't have all the sharp pointy bones will do. That's enough of a pain in the ass in a fillet, You gotta take small bites and just pull them out of your mouth.
By that logic, every Venison sausage on the planet would need to be renamed. What's interesting is that this doesn't bear any resemblance to a pork sausage. If you didn't know there was pork in it, you would never guess. The texture is flakey and fish like 100%. Go Figure😉

It would be a great use for Asian Carp, those fish are very boney and are best used for fish cakes but fish sausage sounds really good too.

I make a 50/50 mix of paua (abalone) and pork with a 30% pork fat...awesome
