The whole "only living with water without 3 days can kill you" is sometimes false. Because well, we know in Half - Life 1, G-Man kept Gordon's body in the state it already was during the Black Mesa incident. Which means for 20 years, his body in the stasis remained the same. Which means Gordon could've used the restroom before the events of any Half - Life game and Gordon could've been a healthy individual. And if not, him living the third day in Half - Life 2 doesn't really count because Gordon and Alyx we're teleported/time traveled a week into the future back in Nova Prospect because of Kleiner's slow teleport issue. Surely, Episode 2 would count (because it's confirmed that episode 2 takes place a day after both episode 1 and Half - Life "day 3" occur") But still, G-Man could possibly keep both Alyx and Gordon alive just for the timeline and story to be the way he written it.
I always just thought gordon just sipped water every now and then, maybe from the suit, I didn't really think about it too much, I guess it's one of those unexplained things that is just too minor to matter though and you just use your imagination.
like you said i'd assume the HEV suit is hi tech enough to take care of food and water for gordon, since it was used in xen and i'd assume those things are sparse there minus sleep though, guessing he's just really tired during the later parts of both games (excluding when gman puts him in stasis, that probably reinvigorates him)
