OLD SCHOOL ROUX/OLD SCHOOL SALT/PEPPER BLEND(WHAT EXACTLY IS IN IT?)

  • I get asked so many times about these 2 items
    These are my most used items in my kitchen
    So i when i make it i make a lot
    They both are very simple and easy
    and can be kept for weeks and even months
    Kosher salt/White pepper blend recipe:
    4/1 ratio
    1 cup kosher salt
    1/4 cup ground white pepper
    mix together and place in air tight container
    OLD SCHOOL ROUX RECIPE
    50/50 ratio
    1 cup melted butter
    1 cup all purpose flour
    mix both together until smooth
    keep in fridge until ready to use

    I keep a peanut-butter-colored roux in my freezer to use as gravy starter during the few times I want sausage gravy on my biscuits.
    And I learned how to make roux from you Chef Jeffery! ☺☻♥♥♥

    Chef, I first heard of Roux listening to Justin Wilson on t.v.20years ago. I never knew what it was. Now I know. I am also going to get some of the Kosher salt and white pepper. I do enjoy all your helpful tips. Not only am I a better cook, I enjoy eating my own food. Plus I have a better day. With all going on today, I know I can always go to your channel and it is going to be good. Always uplifted.

      Lol, I remember watching that show also. It was very entertaining but not nearly as educational as Chef Jeff. First off I learned the correct spelling (thought it was rue 🤣) and now I feel empowered to make and always keep a batch in the fridge. How lovely is that?! 🥰👍

      How well I understand the dilemma! He makes the food look so good and easy to prepare-- I wanna cook and eat it all!!!...but I'm diabetic so I have to eat most of it with my 👀 eyes and thoroughly enjoy his passionate presentation. Watching his videos is very soothing and comforting to me. Also knowing his back story and what he had to overcome to get to where he is today is laudable and very inspiring 👏. Before watching his videos I wasn't much of a meat eater but now I find myself wanting to cook smothered beef tips over rice 😋. Pure yumminess, somebody help me please 🙏 😀!

      @@nailahasabi8716 I am not going to drag it on and on but I just turned 70 myself with type 2 diabetes and other issues. I just try to eat better. With sugar free stuff like syrup and candy Splenda, I eat pretty good. I eat small meals. I just learned there is sugar free ketchup and barbecue sauce. I go to you tube and get diabetic recipes. A lady told me once what is it you can't eat that you want and have not already had ? Very little.I cook it and just alter it a little.We can enjoy food and life. I am always surprised when someone reply to me and I want to thank you for it.Have a great weekend and God Bless.

    Teach.. this is funny last night I made some rue for my dinner (smoked turkey necks w/ noodles).. And this popped up in my feed 10 mins ago..But I used cornstarch what was on hand. I was wondering if you can do a video on kitchen stables..A list on What to always have on hand in your kitchen? Exc flour, sugar so on . Thanks Teach

      I have been thinking about the salt and pepper mix for a while. I even went out and bought cute containers, I was not sure on the measurements. I just made two containers, one for black pepper and another one for white pepper. I make all kinds of mixes, but never thought to make the most used kind, salt and pepper...

      @@LatteBrown I known of the salt and pepper mix I just never know the measurements, the difference is I only use black pepper. When I do it I use sea salt and black course pepper but I just eyeball it. I always know it was more salt than black and went from there. I’m glad Chef J did this video, it will really help people in the future.
      Latte Brown you told me something I never know about and that’s a pepper mixture, what do that mix be used on if you don’t mind sharing?

    Absolutely the white pepper is hotter than the black pepper...I found that out when I wasn't able to share with my grandchildren 🤦🏽‍♀️ it was too hot😅
