Love all teh vids you post but there's just something about a group of friends hanging out, drinking beer and cooking good food of an evening that just can't be beat!
This was timely. I made bull flour 6 mos. ago to do a Central TX sausage "Smitty's" style but this is the only vid I've found talking about that sausage. Picked up a brisket and will make the sausage next couple weeks.
I just made my first batch of sausage using your spice mix replacing some of the normal ingredients of a chicken and roast garlic sausage I've made before (recipe from Ruhlman), it worked very well, probably a better texture then I've had in the past, probably due to the high temp milk powder and mustard powder. I've found the big issue with texture is not so much when it's fresh but binder seems to help keep a good texture after you freeze it.
So good, love to colab and we need more of them! On what to make next, I'm still holding out for you to make either an English Cumberland sausage or a South African Boerewors.

Gonna make some wagyu beef and kurabota pork belly sausage next weekend alongside some shrimp boudin, and can’t wait to see how it comes out! Gonna test that “too fatty” sausage you mentioned with wagyu and kurabota for sure! If nothing else it will be a stoopid expensive failure, but I’ve got high hopes it spews like old faithful during the snap test.
When can us local Prime Patreons come hang out at the shop when you do stuff like this? All that meat looks delicious! Any chance on a hatch chile sausage vid soon seeing that it's that time of year?

I have a request or suggestion. Texas has a ton of great dried sausages for sale all across the state. However there is remarkably little information online regarding making these sausages. I would love to see a video with a recipe to make some of that dried sausage. (Granzins in New Braunfels had some of the best)
Granzin's is the best I've had, and I go out of my way to take my deer to be processed there...I always get a ton of dried sausage because our kids love it. I'd love to see how to do this too!

Look back on Brad’s other sausage videos, he did one on ratios of ingredients not long ago. Using that, you should be able to figure it out and adjust it to your taste from there.
Bull binder has oats.... Add liquid to sausage.... What about oat milk? Kind of an all in one binder/liquid. I dunno I've never made sausage. I'm just an expert sausage making cause you know i watched a RUclips video.

It helps people feel like they’re a part of the group having a drink. For those who don’t do alcohol they can still participate in social aspect and have the taste experience. I drink regular beer, but I get it.

Love these sausage recipes. Made your jalapeño cheese sausage a few weeks ago. Was amazing, but damn was it a pain to stuff them with a kitchen-aid.
