They like the pork but they are so used to beans that is so much sweeter and flavored with maple, bourbon, bacon so they are different for sure - but I love it
In South Chile we have a similar dish (porotos con riendas y carne ahumada), but we put in many more spices (paprika, comin, origan, black pepper and smoked Chile), vegetables (onion, garlic, bell pepper, pumpkin and others) and thick noodles. The pork is also smoked in our case.

Yup, the added fat makes it way more flavorful. I find that some people find it too fatty though - not me 😀😀👍👍

I think using picking vinegar or diluted vinegar essence (12%) is better than just any vinegar. A high acetic acid vinegar is needed.
Spad från inlagda rödbetor är en bra grej i också.
