what month did you travel?we just stayed at Hilton Mar Caribe at Hotel Zone.. we had a wonderful time.. we would like to try this Hilton next the beach is one area we enjoyed at the Hotel Zone. Water was so blue and clear.
Are the excursions very expensive ? I’m thinking about going in September but I’m worried because I want to do activities and I’m worried some activities might not pick us up at the hotel as the resort is isolated
If you go with reputational one, no worry. I used BD Experience and they have sale representative sitting in the hotel so you can always can talk to them

You should book the tours at the hotels but look for BD experience guys. They sit near pass the buffet. These tours are expensive. You might want to book in bundles. Chichen itza is nice but too hot. Not much to see. Since you would pay a lot for the all inclusive, you probably want to stay and enjoy as much as possible (foods, drinks, alcohol are unlimited) if you pass out, it is not their problems ;). There are plenty of foods however for fine dining, you should make reservation as soon as possible.
It is hot and humid there. No need for warm clothes. Sun screens, hat, sunglasses. If you travel with children, make sure bring medicine (Tylenol or Motrin)They can get sick during the trip.

we went during December and it was hot. I can't imagine any other seasons

It is single bedroom with ocean view. The floor level is not guaranteed. We were lucky to get the top and middle section
