The old goat is on the row by row sign. Growing up in the mountains of Northeast TN we always had watercress growing around the creeks and springs. My Mama would use it for fresh fruit salads with watermelon, apples, or strawberries, whatever was in season. She would add it to "killed" lettuce and onions that she prepared with hot bacon grease and then a dressing of apple cider vinegar, milk, and a dash of sugar. The watercress added a nice peppery flavor. I like the indoor microgreens ideas. Thank you both for a great video, and the laugh at the end, lol.

I see that Ol' Goat! He jumped right out in the open this week! We used to have a spring fed creek that ran through our property at the cabin and watercress grew wild in it when I was a kid. My mother used to pick it all the time and loved it! I didn't care for it at all then, found it to be very "spicy". Really haven't had it in years. Wiki says: "Watercress and many of its relatives, such as garden cress, mustard, radish, and wasabi, are noteworthy for their piquant flavors." They list it in the Brassicaceae family and kin to nasturtiums. I reckon "piquant flavors" is a fancy term for spicy. Evidently that spring dried up because that creek no longer runs. Man, after what might be my toughest summer garden ever, "environmentally controlled Ag" sounds really good to me about now! :)

I live next to no till chemical farming. Micro greens and pure plants saved my life so far. Watercrest is one of the four most nutritious plants. Watercrest kale collard greens mustard. Have the same nutrient density. Growing micro greens with water crest is tough to eat :-) rabbits keep eating my full sized.

I like to use coco coir for most of my microgreens, for peas you can actually grow them without any soil in a mesh type tray.
