    Sam, the "yellow stuff" at the bottom of the chicken leg is actually the outer layer of "Chicken Skin" that covers the feet, think 'a hide that covers their feet'! Most chickens don't have feathers on their feet (there are some that do), so in order to protect their feet the outer skin turns into a hide. During harvesting, the mechanical "feather plucker" machine will usually strip off the outer skin/hide of the feet in addition to the feathers. Sometimes in mass production chicken harvesting the QA/QC process misses some of that outer feet hide.

    Lol Sam it is the skin that was originally on the outside of the feet, usually when they kill the chicken its removed in order for the feet to be consumed but some people do a lousy job and i guess since not a lot of people eat it then they don't care so much about it or maybe they don't even sell it so some was left on your drumsticks :)

    I live in central Florida! The supermarket here in Florida is called Publix. They dominate! We find all of ours ingredients there. Trying this recipe tonight. I actually put them in a brine for a few hours before I smoked them! Love this recipe

    Apricot preserves mixed into BBQ sauce will glaze up like that. I use it all the time. Thanks for the idea. What a great party recipe. Adding some sesame seeds to half of them at the end might be cool.

    I did something similiar, but I cooked the chicken, chopped it up added cream cheese and put a dough mold around the chicken bone to give it that shape. I then dipped in cornstarch, egg mixture and panko and deep fried. It was a nice presentation, as are these!

      Sam... That yellow stuff at the ball joint of the Drumstick is the outer skin of the birds leg right below where the feathers stop and it's foot begins. Ya think THAT'S bad. Come to Missouri the 3rd Monday in April and go Turkey Hunting with me. They have HUGE drumsticks and they ROCK when smoked low and slow. 😋

    I always use my welding gloves with the BBQ, the smoker or the pizza oven. Best way to avoid the burn when BBQ'ing, pizza making or of course welding and blacksmithing. You should try cooking a medium rare steak on a steel plate heated up in your backyard forge, it can be tricky!

    Easy solution to all the cleanup on the bone end is to simply wrap a little aluminum foil around it. Makes it more sanitary for the ones eating it also. Love your videos.

      ive always understood bird fat to be yellow. some may have been fatter than other and excessive fat from mass production can show up in the joints. Id say the yellow is just fat.

    Using my Toaster Oven right now to make my double layer "Tortilla Pizza" cheese on bottom layer, pizza sauce, onions, & chesse on top. Set to bake at 350 for 30min "In the Toster Oven"--- DELICIOUS. Love u guys🤧🤧🤧

    Yellow is the exposed foot skin. Cutting off the joint helps to allow the hemoglobin in the leg cook and run out so people don't see red and think it's undercooked. Also gives a cleaner look and easier no fuss removal of the cartilage and connective tissue, and allows scraping the bone out to properly clean it. It's called "frenching" for whatever reason.
    Now, for the cooking process... Cook it without sauce first. That way you can render out the skin and maybe crisp it a little. Nobody likes soggy, flabby chicken skin. Glaze in layers during the last few minutes of cooking over higher heat AFTER you have properly cooked the skin. Starting it off, should be just salt, pepper and oil.

    Hey Sam! Meat butcher here! The yellow “skin” sometime found on raw chicken is purely just the outer layer of skin. Most of it comes off with the feathers. But you’ll typically find it on drumsticks because the tough skin doesn’t all get peeled off when they remove the feet.

      You can substitute bbq sauce. I’ve made lollipop chicken with pork rib rub and bbq sauce. Similar sweet profile. Obviously not Asian tasting, but an alternative.

    I weld and blacksmith, and those Harbor Freight gloves are a killer deal. I use one pair for cooking as well. Kudos from the person who sent them to you.

    push that boning knife through the knuckle with the tip into a wooden board, then you can pop off all the cartilage for a clean bone with one movement

    Made stuffed drumsticks as well before and worked as an awesome appetizer. Tunnel bore with a knife from both sides of the bone and slip out the bone. The. Stuff w anything!! Jalapeño & cheese, or anything else

    Ive only used a toaster oven for 10yrs now. Family of four.. My Oster just wont give up…My real oven is used as storage..reverse seared london broil balsamic reduction..in a toaster oven..

    Im a beginner cook and griller.
    Just bought my first smoker.
    Just wanted to say yout video are great.
    There are alot other videos out there but you have something that is different than the rest.
    Yours are more natural, more realistic, and dont look like you are trying too much.
    But at the same time so insightful.
    Great great great balance.
    Fir my first time smoking im gonna go on the safe side and make your chicken lollipops and your beer can chicken.
    Lets see hiw that goes!!!
