Sam, the "yellow stuff" at the bottom of the chicken leg is actually the outer layer of "Chicken Skin" that covers the feet, think 'a hide that covers their feet'! Most chickens don't have feathers on their feet (there are some that do), so in order to protect their feet the outer skin turns into a hide. During harvesting, the mechanical "feather plucker" machine will usually strip off the outer skin/hide of the feet in addition to the feathers. Sometimes in mass production chicken harvesting the QA/QC process misses some of that outer feet hide.

I live in central Florida! The supermarket here in Florida is called Publix. They dominate! We find all of ours ingredients there. Trying this recipe tonight. I actually put them in a brine for a few hours before I smoked them! Love this recipe

I made these - like 18 of them for Christmas day, and then did (once I had the shape) an asian style sticky sesame chicken - they were fantastic.. but wow that's a lot of hard work!!

I did something similiar, but I cooked the chicken, chopped it up added cream cheese and put a dough mold around the chicken bone to give it that shape. I then dipped in cornstarch, egg mixture and panko and deep fried. It was a nice presentation, as are these!

I always use my welding gloves with the BBQ, the smoker or the pizza oven. Best way to avoid the burn when BBQ'ing, pizza making or of course welding and blacksmithing. You should try cooking a medium rare steak on a steel plate heated up in your backyard forge, it can be tricky!

Yellow is the exposed foot skin. Cutting off the joint helps to allow the hemoglobin in the leg cook and run out so people don't see red and think it's undercooked. Also gives a cleaner look and easier no fuss removal of the cartilage and connective tissue, and allows scraping the bone out to properly clean it. It's called "frenching" for whatever reason. Now, for the cooking process... Cook it without sauce first. That way you can render out the skin and maybe crisp it a little. Nobody likes soggy, flabby chicken skin. Glaze in layers during the last few minutes of cooking over higher heat AFTER you have properly cooked the skin. Starting it off, should be just salt, pepper and oil.

Hey Sam! Meat butcher here! The yellow “skin” sometime found on raw chicken is purely just the outer layer of skin. Most of it comes off with the feathers. But you’ll typically find it on drumsticks because the tough skin doesn’t all get peeled off when they remove the feet.
You can substitute bbq sauce. I’ve made lollipop chicken with pork rib rub and bbq sauce. Similar sweet profile. Obviously not Asian tasting, but an alternative.
