what about the story of the 3 guys that took a spoon and dug a tunnel to the roof over months and one night climbed out and jumped in the water.. and they assumed they all drowned?
Yep, as depicted in the Clint Eastwood film "Escape from Alcatraz" It's presumed they drowned, which is the official line as it fits the legend of the inescapable prison. Another group of prisoners who made it to the water were washed out to see in the strong current. The film offers a more ambiguous ending, hinting they escaped. For years after the escape, there were sightings and letters purported to be from the escapees, but I don't think it was ever proven whether or not these were hoaxes.
The Book by Jim Quillen (mentioned in the video) suggests that they were simply looking for an excuse to kill some of the convicts so the scale of the escape attempt was exaggerated by the authorities to bring in the military. It's a pretty interesting book, well worth a read if you're interested in the prison.

Clint knows how to get out
Wow they brought the military in to end the uprising, that’s crazy, those prisoners had balls of steel…
Some of those guys were serving a life sentence, they had nothing to lose.
