I love you. I do. Is there another group, outside of Louisiana, which calls their mirepoix the holy trinity? Because that’s bell pepper, celery and onion. Growing up I always wondered why it didnt include garlic. We Cajuns love our garlic. Carrots? Not so much. You won’t find them in gumbo, red beans and rice, or jambalaya. PS - this looks amazing.
Always carmelize the onion first... Chef Jean Pierre says always... always... cook the Onion first... the Maillard reaction (the chemical process of rendering the sugars and proteins thru cooking...which enhances flavor...) takes time with Onions... they must be carmelized first... then add the other other ingredients... a small critique... but a rather important one!
Hahaha… when I saw this for some reason I read it in a posh and foreign food voice and wondered what is beesawn ragout. Dear Lord. I’m Canadian, too. 🙄🤭🫣. 🦬 is a tasty meat and very lean. Yum yum!
