    I can't overwrite non-workshared "cloud model" on ACC Docs. Is there a way to maintain previous versions of cloud models so that I can keep all the issues/markups even on bridged project?

      Good Morning, unfortunately this won't be possible. If you re-save it as a cloud model it would start back at version 1 and you would lose previous versions and markups. You will need to continue as you are for any existing project files if you need the markups and previous versions.     I have saved a cloud model using this process, but I no longer have the ability to add revit links, how do I link revit files (also saved to the cloud) into my main cloud model?

    Is the cloud file considered as central file? Can multiple person work on their local file and sync back?

      In this video I am using a standard Revit project so only one person can access it at a time. However you most certainly can host central files on Docs so long as you also have a Collaborate Pro license in addition to a Docs license for each user accessing it.
