I'd imagine it could be trueish, especially with the amount of time needed to caramelize the onions and cook the beef. I imagine the garlic wouldn't hold its structure well exposed to so much cooking time and with stirring would get somewhat disolved in the sauce :)

They didn’t actually have all that stuff either. They had food and alcohol but I never heard of them having wine and lobsters for dinner though.
Also, it’s almost impossible to be labeled O.C. and be able to get placed in a camp without fences. Usually those minimum security cams are for first time offenders and white collar type guys. Once you have O.C. on your jacket, or file, you’re pretty much stuck to max and medium security.

Goodfellas is truly something. I don't think Godfather 1+2 got the balance right. Great films but too sympathetic to the mob and romanticised the life. Goodfellas was raw and felt more real.

Garlic simply doesn't melt when kept on the heat, in fact it is likely that the garlic will burn if it cooks for too long. We have to teach you everything...

Yeah that’s definitely too many onions, the beef is gonna mask the subtler flavor of the veal you gotta use one or the other you can’t have both, same with pork it masks the flavor of the veal, use the beef and the pork in the sauce and save the veal for the main course

I made a similar pasta. I used 2 big onions. I first, browned the meat, then I added the chopped onions until they were caramelized. Then, added garlic, and a crushed "arbol chile". Then, I added the crushed tomatoes and tomato sauce, simmered it, and the onions gave it a delicious flavor. It had an almost French onion soup under taste.
ive made this dozens of times for years, we just call it the goodfellas sauce. trick is to get a couple lbs of some sliced fancy sausages: venison, pork and apple, boar, go wild with it. 4 hours of those and in the last hour add meatballs. dont forget a solid half bottle of red wine and plenty of garlic, basil and parmigiano reggiano. use the largest rigatoni and keep the slices of sausage and sizes of the meatballs small so they fit well.
Actually this was a real thing in the federal joint... I know cause i worked in the kitchen and made alot of money from these guys for bringing them different foods/ingredients!✌❤💪💪💪
Garlic doesn't "liquify in the pan" like that. It roasts and caramalizes no matter the size of the pieces. What slicing so thin does do is maximize the surface area of the ingredients so the sauce has a stronger garlic taste.
At around the 11 minute mark you mentioned “Phloxclan” and how when you try and assume what it is you typically think it’s a plant but it ends up being a bird- Phlox is a type of flower, made me giggle since I recognized the name from when we used to have them in our garden!

Ray Liotta's narration and Scorcese's direction and writing with Pileggi's tied this story together beautifully. You can smell and taste that food!
