Nothing beforehand, just make sure your fish is very fresh and clean. Choose your fish as you would for sushi.
That looks good! Was imagining Carpaccio to be thinly sliced pieces of fish or meat(that can be eaten raw)

Yes, it's a great technique! Although it only works with firm-fleshed fish, such as seabass or dorade.

It's raw, like crudo or sashimi.

Lemon vinaigrette. Lemon juice emulsified with oil, honey and a little sugar. 👨🍳
@@ONTHEPASSWITHMAX The one you put on the plate, then the fish on top? That's interesting. I have never seen it done this way without lemon juice on top. Thank you for getting back to me.
@@BelAge This is not the classic way of making fish carpaccio. But personally I think it tastes amazing. I made this video last spring, and we used some foraged herbs (oxilise or wild sorrel) which as a strong lemon flavour as well.
