OMG! That one “porn” shot, with you taking it out of the dish with the cheese sauce.......that was ridiculous.....oh those “glam” shots are everything!!!! Congratulations! I LOVE your awesome channel! You are definitely rockin it!
Found you in February of 2023. I've been on a kick of using chickpea flour more, I've done some egg cups, but never thought I could use it as a tortilla. I'm thrilled to find this out because I am allergic to corn and cannot eat corn tortillas. This looks amazing...I don't have quite all the ingredients, but I will be getting what I don't have and trying this. I cook at men's ministry retreats, this may just be on the menu next time! Blessings!!!
Wow, this dish IS a game changer! Pure Love. I am from the SW and Hispanic. My fave thing I miss is enchiladas suizas and sour cream enchiladas And mex food in general ... So few vegan Mexican options!!! I am making this on this very weekend!! Thank you
I have watched and recreated hundreds of creators recipes. Your unchicken wings were amazing. I will certainly be following your channel. You are very very good at what ou do and the chic pea flour was fantastic as a batter!
Yay! I actually made this for a friend the other night as well, and I was giddy at how much I loved the recipe. I actually used Beyond instead of the Soy Curls, and the flavor was a bit overpowering... I should have just stuck to the original. But it was still tasty and I loved having some leftovers. Oh! I also tried it with corn tortillas instead of the chickpea flour ones, and I found the corn flavor to be a bit overpowering as well. Again, it was still really good, but I should have known better than to mess with what had already worded so well. Haha. Thanks for letting me know!
@@MonsonMadeThis This is going to be a recipe that we’re going to keep in our rotation. I love soy curl recipes, and adding chickpea flour put it over the top for flavor, high protein, and fiber. What more could you ask for? Thank you again. I love your recipes.
Recently found your channel, I very much enjoy your style thanks for sharing this valuable knowledge. My husband has CML switching toward vegan food has helped tremendously with the side effects of the chemo medication.
I don't know if you'll see this; I notice you haven't posted in a couple of years. If you do - this looks amazing! My roommate used to make chickpea flour flat breads (soccas) and I loved them, so I know I would love this too. Thanks for the video, I hope you're well.
I made this today. Delicious! Very easy. I changed it slightly by using salsa instead of tomato paste and my own flavourings. Substituted tofu for soya curls too. Never the less it was great!
Yay! I love when people make recipes their own. I never follow a recipe exactly unless it's a cake or a pastry recipe. I use what I've got on hand or what I think would taste best, and I go for it. I'm happy to inspire you to create something delicious.

GREAT job! I just stumble on your channel. I really like your niche with the chickpea flour. I've been wanting to do a Mexican enchilada casserole dish and this is great! Off to watch other episodes.
SCRUMPTIOUS Vegan Enchilada Suiza Bake Monson! Looks kinda like what we make herein Mexico, which we call 'Pastel Azteca" Aztec Cake, but that's made with corn tortillas, trying out the Chickpea flour tortillas as well as the chips, from a video I saw yesterday here on RUclips.😋👍
Looks really yummy! I made your scalloped potatoes for a crowd on Sunday ( we ate outdoors) and they were a big hit! Takes a lot longer in the oven, though. Oh, and I added sautéed mushrooms to half of it.
HAPPY ANNIVERSARY! Okay...love the recipe. I have seen recipes for chick pea pancakes before but really helps to see someone execute them. Adore us some soy curls. Have never made them the way you did I'll admit theres a few steps to that but I really wanna try it. Thank you.
Thank you! I have tried a few chickpea pancake recipes. Some call for baking soda or powder. Some call for flax meal... This is just a super simple pancake that makes a great savory bread or "tortilla". If you're looking for that, this is the recipe. Also, using the blender is a pretty big help in terms of getting the texture right. Let me know how they turn out.
I am very excited about using chickpea flour now. I am not only on my vegan journey, I also am gluten sensitive so I have to eat GF. The tortilla's look perfect for what I am looking for.
Chickpea flour might just be my favorite plant-based ingredient to cook with. It's so good in so many applications. It's the perfect egg substitute in so many ways.
That looks amazing!! I’m hella gonna make it. And also, everything you said about going from watching vegan RUclips to keto youtube is so true! 😂 Like they can make fun of vegans for eating fake meat and cheese, but there they are eating fake bread!
Thanks! Yeah, Soy Curls are a game changer. And thanks for reminding me that I need to restock! I'm glad you found my channel, too. I appreciate the love.
I made this tonight and it came out amazingly delicious! Thank you! Definitely adding it to my favorites! On a side note...the typed recipe calls for a 14.5oz can of green Chiles...in the video, you use a 4oz can (which is what I used). A typo perhaps?
I'm so glad you loved it. It's still one of my favorite recipes I've ever put together. And yeah, MAJOR TYPO. Sorry about that. I've gone ahead and fixed it. Very sorry about that. EEK.

Thanks! This is still one of my favorite recipes. I haven't tried it with other types of tortillas, but I guarantee that they will work. Corn would get my vote.
Tofu! You can use tofu! So versital flavor with whatever, it is a sponge for flavor, you didn’t mention it so I thought I would… I love that the tortilla fits the pan perfectly! I think the title should be “ the Anniversary bake” what else could t possible be? Lovin it and the cream sauce that I thought would be runny but no it set perfectly!
Congrats on a well done year of great RUclips content! This looks like a delicious recipe! You make everything look so easy even if it has multiple steps to a delicious meal.
Once again, Brilliant! Can’t wait to try these! Happy anniversary!! Love your videos and love how you still have the warning labels on your Nutri Bullet. Hahaha. I use mine every day too. It’s a great appliance.
Thank you! I have never actually thought to take those labels off. And I still laugh every time I read that it warns me to wait until the blades have stopped spinning before opening. Like, what kind of magician do they think I am to be able to stop the machine, invert it, and unscrew the lid before the blades have stopped. What happened to require that warning? Thanks again for watching and taking the time to comment.
Soy curls disappeared from my area years ago and I didn’t know what they were called. I’m so excited to order some. I used them to make fake fried chicken.
NOOOOOOOO! I found myself at the Lake of the Ozarks without a proper grocery store for miles, and I ended up ordering them from Amazon. If you check out my air-fried jerky video, that was filmed at that lake house using those emergency curls... Actually I think I packed a bag of curls with me in my suitcase, which I used on the first night, and I had to order more to actually shoot the video.
Happy anniversary! I really like your channel. Putting a silikon sheet under the pan. Brilliant! Gamechanger. I will never scrub black crusts from the bottom of my oven again. Why did I never think of that? Thank you! The recipe looks amazing, too. :D
Thank you! I actually have a couple in there. I bought the copper sheets from Bed Bath and Beyond because you get 2 for like $10. I use one to line the bottom of the oven, and then I use the other to go on the racks as pretty much a baking sheet. I cook everything directly on it. They're also great because you can cut them to fit.
🤍 Hi MMT 🤚 I recently tried making a quick and easy Vegan Chilles Rellano Bake , thinking of how the Authentic dish is really particularly well prepared and delicious. I didnt have Chickpea Flour to make a batter. I want to try with that too , even though It still tasted very Good with blossomed ground Flax Seed and Baking powder ... I was missing that fluffy thick Eggy fry batter effect. I would call Your dish, Chillies Rellano Francaise Suisse ( Suizas ) Verde Chicken Bake ( V ) 💚 I also made quick and easy one Pot assembly Suisse Verde Enchilladas. Thank you! After this video, I didn't cook with Soy Curls for a long time. I have no excuse. But I just made a Teriyaki "Chicken" Bowl Salad with them a couple of weeks ago that I would highly recommend. If for no other reason than the fact that the teriyaki Soy Curls component is amazing.

Thank you! And thanks for being here for most of my time on RUclips. And yeah, those chickpea tortillas are so good. I've been making them a lot for tacos and sandwiches. As long as you don't overcook them, they stay really pliable. I considered making a cauliflower cream sauce instead of the cashew. I think any sauce you make that goes in the consistency of heavy cream will come out the same. It's all water-based in the end.
Thank you so much! I don't. But I should get one because I have been seeing so many delicious tamales on Instagram for the holidays. Maybe I'll give 'em a go!
Check out Jill McKeever's vegan tamale recipe. It uses soy curl dust basically as the filling. Its super good but I added cocoa butter. Hers are oil free.
I've been following your channel for a while, now. I was sort of asked/elected to create a "Vegan" dish for a couple of missionaries (based from our church to Wales, U.K.) that will be coming to our over 50 Wednesday group (Golden Heirs). She is totally vegan & he is non-dairy. So, I felt that a totally vegan yummy, such as the one you just made, would be absolutely perfect!! Anyway, I AM going to give this a try & may even get the non-vegans in our group to take a "no thank you bite"!! I'll bet they will be amazed & will be begging for more!! Just saying!! Monson, you are absolutely awesome, I love you & your channel & a Hearty Congratulations on your "One Year" Anniversary of your You Tube Channel!! Keep up your great work, Chef!!
Thank you for all of the love and the compliment of calling me "Chef". I appreciate it. This dish is very satisfying for all. Will you be able to get all of the ingredients that I used in the recipe, or will you need to make some substitutions? I can't wait to hear how it goes! Good luck!
Love your channel! You are easy to listen to, easy to follow and more importantly easy to comprehend what your telling us. Your great personality is a bonus! I questioning myself as to why I don't use chick pea flour. Good idea. I'm planning on making this (with my own tweak, cannot do the pretend meat or the soy curls. It's a texture thing, lol I will add more mushrooms) I'm looking forward to a weekend of Monson Made This marathon.😊 Thank you for good content.
Thanks for stopping by, watching, and taking the time to comment! I was really really into chickpea flour for a while. I wanted to use it for everything. It's such a cool ingredient. I get what you're saying about the texture. It's not for everyone. If you use sauteed mushrooms, I think this will be really good. Let me know how it turns out.
That pan... I love that pan. I bought it late at night, a few years ago, after watching Curtis Stone demo it on HSN (or QVC). I have a link to a set here, under Pots and Pans, but I can't find a way to get just the pan anymore. (www.amazon.com/shop/monsonmadethis)
I did not soak them. Are you using a Magic Bullet or a Nutribullet? If you are using a Magic Bullet, you definitely want to soak them for a while. I seem to get a great texture using the Nutribullet without soaking them, though. If you're ever in doubt, just soak. Anything other than a high powered blender will give you a gritty texture if you don't.
That's probably it. A Nutribullet is a lot more powerful than a Magic Bullet. A standard blender should work if the cashews are soaked long enough or boiled.
I thought I was going crazy.... this video came up in my recommended today and I thought it was a new one, so when you said you'd only been on youtube for a year, I was so confused because I knew for a fact I've been watching you longer than a year. Then it dawned on me that this had to be an old video.
Congratulations on your one year! Here is wishing you many more 👍going to try this recipe for sure. btw quick question: what would be the best method to reheat? I want to make this for my office holiday potluck and share how tasty vegan food is and we vegans are definitely not missing on delicious foods 🌱🌱🌱😃
Thank you! I actually reheated some last night... I have to admit that much of the creaminess is lost after it cools and then reheats. It still tasted good, but this dish is definitely at its peak shortly after coming out of the oven. It doesn't take long to cook, would you be able to bake it at the office? Or bake it off before going into work, covering it with foil or a lid, and then serving it at room temp?
In this video, I use a vegan "No Chicken" flavored Better Than Bouillon. I'm pretty sure it contains sugar, though. I'm not sure of any commercial brands that don't, but honestly, I haven't really looked. Good luck on your search!
OMG! That one “porn” shot, with you taking it out of the dish with the cheese sauce.......that was ridiculous.....oh those “glam” shots are everything!!!! Congratulations! I LOVE your awesome channel! You are definitely rockin it!

Good luck!
Happy anniversary!
Thank you! And thanks for being here from the beginning. I appreciate all the love you've shown over the past year.
It's a texture thing, lol I will add more mushrooms)
I'm looking forward to a weekend of Monson Made This marathon.😊
Thank you for good content.
This sounds like such a delicious recipe! Thank you!! What pan do you use? I have been looking for a good non stick pan!
That pan... I love that pan. I bought it late at night, a few years ago, after watching Curtis Stone demo it on HSN (or QVC). I have a link to a set here, under Pots and Pans, but I can't find a way to get just the pan anymore. (www.amazon.com/shop/monsonmadethis)
what is soy curls? I've heard you say this. Is it dried soy chunks you can buy in shops?
www.butlerfoods.com/soycurls.html They can also be found is some grocery stores and on Amazon.
You are awesome!
The rabbit hole was caused by youtube Ai algorithms.
I'm thankful to the AI.
Great channel! Make a cook book!
Thank you! I really should.
Should top this with pico.
I think that's a great idea.
Did you soak the cashews? I use a magic bullet too but I always end up with a weird texture, lots of small chunks. Should i do something differently?
I did not soak them. Are you using a Magic Bullet or a Nutribullet? If you are using a Magic Bullet, you definitely want to soak them for a while. I seem to get a great texture using the Nutribullet without soaking them, though. If you're ever in doubt, just soak. Anything other than a high powered blender will give you a gritty texture if you don't.
Thanks for your answer. Mine must not be powerful enough, even when i boil my cashews the texture is not so good.
That's probably it. A Nutribullet is a lot more powerful than a Magic Bullet. A standard blender should work if the cashews are soaked long enough or boiled.
New subbie!
Yay! Thank you!
Hello, new to your channel and hooked!!! Did you use raw cashews?
Welcome! Yes. Raw cashews.
@@MonsonMadeThis thank you! I will just have to cook it in the morning. May also try to use instant pot to come up with an alternative.
LeoOk😍😍🙋♀️
Does anyone know what brand of chicken bullion. That does not contain sugar or sucrose?
In this video, I use a vegan "No Chicken" flavored Better Than Bouillon. I'm pretty sure it contains sugar, though. I'm not sure of any commercial brands that don't, but honestly, I haven't really looked. Good luck on your search!
Great crep/ tortilla option!
Wbhole food plant based
Vegan double chick cheesy enchiladas
Sounds delish.
I think I'll use cold, canned chilis.😂👌
I mean, do you. I'm only presenting the blueprint.... Have you tried freezing them? That might really help to take some of the heat out.
