I have just started watching this video and it looks interesting. I believe Noge is a district in Yokohama, correct ? This trip, we will only do a day trip to Yokohama and plan on visiting the ramen museum in Shin-Yokohama. We are staying in Shinjuku, and if I understand you correctly, Noge disctrict is interesting on the evening, is that right ? So we will keep Noge for another trip (where we overnight in Yokohama). What else (besides the ramen museum) would you recommend doing in Yokohama during the day ?
For Yokohama, Minatomirai district is nice.(Toku Toyoko line, Minatomirai sta.) Basically a modern harbor with neat malls. There, Yokohama Red Brick Warehouse is popular and mall called Hammerhead is new. Also few station passing Minatomirai and popular Chinatown. Lot's of tasty Chinese food.
Ramen museum,great! I've joined the 60min ramen making class and was fun. For the ramen, I always choose half portion ramen and try several ramen shops. My best pick there is for pork borth ramen Isso from Fukuoka pref is the best. And also Ryu-Shangai serveing local miso ramen from Yamagata is great.

All the places look great, with the exception (for me) of the hormone center, because I dont like offal and intestines. The last place you visited has me biased. I love ramen, and I love pure italian food. To see a fushion of both, is quite unusual. But I would give it a try.

Town similiar to Nogi is Nishi-ogikubo.15min train from Shinjuku. Affordable and tasty!Will make movie some day!
