You can substitute all-purpose flour with spelt flour with 1:1 ratio. Oats and wheat flour doesn’t work the same way and need tweakings in the recipe. Hope it helps!

Hello there, the cake is now in the oven. I've made carrot cake before but never thought of adding dessicated coconut. Will be delicious I'm sure. Just a little remark, it would be helpful if you gave the measurements in oz or grams instead of cups for we might not all have measuring cups at hand. And because you have to preheat the oven, to give the information at the beginning of the video so we can pop the oven on and it can heat up whilst we prepare the cake. Hope you don't mind this little remark.

What is the substitute of pecans?
I would just increase the carrot,pineapple and coconut to the weight of the pecans. I don't like nuts in a cake either.
You can try like Betty Boo said, or you can use walnuts, or for a nut free cake you can use raisins.
