sugar glass is not yellow just by virtue of being sugar. it only caramelizes if you cook it too long. you even said in the video it was ~350F, which is past both hard crack (~300F) and caramelization (~340F). if you want hard crack, you can't leave it on the hot stove after you've hit hard crack.
If you cook the sugar at a lower heat, don’t stir it, and wipe the edges with water It will prevent carmelization and be perfectly clear
