The atmosphere, the chemistry, the humbleness, the professionalism,... I didn't want this video to end. I lived in Japan for 12 years, and I've been a burger lover as far as I can remember. So much joy in this video... Thank you for this 10 minutes of heaven. It makes me go back to Japan just to try out Gui's Burgers!

Guga, that sharing of your process of making your smash burger and Gui sharing his methods as well absolutely compliments and reflects the teachings of a career butcher/meat cutter/retail meat specialist/cook extraordinaire and also demonstrates very well the passion of a man that I learned from myself. He has teachings he shares that he learned from other artists he met on his journey throughout his travels. Thank you for this episode, and thank you for sharing your techniques with us. We also understood that blending meat processes are special and something that we like to keep close to the heart as well 😊. You and Gui are truly a great representation of your art, and I hope to see more of your work together - I mean, that passion you both share is truly inspiring.
This guy seems like a really kind and genuine dude. Like his vibe but loved that burger. I wish I had the luxury of giving it a shot. Come next paycheck I'm going to see if I can find some wagyu and make my own burgers

We've switched to using wagyu fat for all of our baking at home; loaf bread, buns, pies, cakes, etc. and it's gone to a whole new level. I made chocolate chip cookies, 3 batches; one with butter, one with coconut oil, and one with wagyu tallow, and the batch with wagyu fat was the flavor king. Now, if you want to make something different that's really good, the coconut oil cookies are great, but the tallow added a rich, savory depth that added a contrast to the chocolate chips. 👍
Sounds amazing! Have you ever tried baking with beef tallow? I love using it and wonder if there's much difference to wagyu fat so i can justify my purchase lol
Don’t brush oil on the outside of the bun! The bum is basically an edible napkin. I don’t need it to be shiny. I need it to keep my hands clean general 10:07 debauchery.

@@kiefmanning7394 You’re certainly allowed your preferences. What I like to do, that may change your mind, is to fry the bun in the leftover burger juices on the pan. Add’s a nice crispiness and flavor to the bun
