As a British person who never had kimchi until they were in their 20s, I can only eat it cooked into something.
Does Korea do Walnuts pickled in malt vinegar? I could eat a whole one of those out the jar (eventhough you're suppose to eat it with poultry).
Try store bought and homemade. Both different flavor profiles. U might like one better. Store bought tends to be sweeter and precut.
there's also white kimchi (not spicy) and different levels of fermented kimchi! you might like white kimchi or fresh kimchi (that hasnt been fermented for long) if you want softer flavors.
Freshly made cucumber kimchi hits different, same with radish kimchi. I would recommend those to try if you haven’t! They have a much lighter flavor and a crunchy texture.
Sometimes I put kimchi on the bbq when we have korean bbq, it tastes sweeter that way 😌

Ok so I live in San Diego and we have the BEST authentic Mexican food in the whole United States. Literally 15 min north of Mexico. And I HATE chipotle hahaha it’s like if I want the meat or a burrito or a bowl I can go get an authentic from scratch lol
