The use of an emulator allows what are known as "save states," which are essentially checkpoints that can be returned to on command (usually by hotkey). They may also use frame-by-frame input, which allows them to control the movement of their character in every single frame. With these tools in conjunction, if they mess up, they can return to their previous save state and try again, and once they complete the part successfully, they may save over it, so that they return to that point instead. It's a lot easier to see physically than to explain.
