It is made with milk fish, black beans and tomatoes, and seasoned with minced garlic, green chilies, say sauce, sugar and all purpose fllour. INGREDIENTS
700 grams milkfish (cleaned and scales removed)
4 tablespoons salted black beans
4 to 5 tomatoes (chopped)
3 cloves of garlic (minced)
green chilies or onion leeks
1 teaspoon soy sauce (or salt/fish sauce)
1 teaspoon sugar (optional)
all purpose flour (for dredging)
oil (for frying)
DIRECTIONS
Prepare the bangus slices. Rub them with salt and pepper on both sides. Let them sit for 10 minutes.
Put some flour on a plate. Dredge to bangus in the flour. Shake of the excess.
Heat some oil in a pan using medium heat. Fry the bangus slices until the skin is crispy and golden brown. Flip to cook the other side. After frying, transfer to a strainer to drain excess oil. Set aside.
Heat some oil in another pan. Saute the onions, garlic and ginger until fragrant. Add the tomatoes. Gently crush the tomatoes while sauteing. Add the tausi beans and saute for a minute. Pour a cup of water and let it simmer for a few minutes.
Do a taste test. Season the sauce with soy sauce (or salt/fish sauce), black pepper and sugar (optional).
Add the fried bangus to the pan and baste them with the sauce. Add some chopped green chilies and onion leeks for added spice and flavor. Let it cook for a few minutes for the bangus to absorb the sauce.
Transfer the bangus with tausi to a serving plate and serve with a lot of hot steaming rice. Enjoy!
