Yum!!! To make spaghetti squash easier to cut, I put it in the microwave for maybe 5 minutes to soften. Also works with sweet potatoes, butternut squash, etc.
Those recipes Michele are great for anytime during the fall/winter months ahead. I would make them, even though I don't celebrate the holidays. Another fantastic video and have a happy Sunday and week ahead.
What a Terrific video ! I just made your spaghetti squash with the roasted garlic ( genius) BTW and the almond ricotta,delicious ! I’ve never made it before and didn’t have high hopes for it ! It’s AMAZING ! It’s our dinner tonight ! The potatoes and gravy will be tomorrow night with a lentil loaf ! Your spaghetti squash lasagna idea is GENIUS, Michele! I've tried spaghetti squash a number of ways, and it's always been underwhelming - but your recipe might be the game changer! Next time I see spaghetti squash on special, I will give this a try and report back. I also learned a neat tip about roasting garlic with squash: you can put the bulb in the cavity of the squash, and it will become nice and tender. I'm sure this works with acorn squash, but spaghetti might have too much water. Just thought I'd pass along! I look forward to your videos every week, friend. If you cut the spaghetti squash the other way, when you fork the “noodles” out, they come out LONGER like pasta. Give it a try! 👍🏼

Pros and cons to peeling potatoes? I typically don’t to save time and I have heard the peels have a lot of nutrients. Your thoughts?
Yes definitely fine to not peel if they are organically grown and washed well.
