Man I gotta tell this story and I swear to God it is true. A few years back I got a friend of mine a pressure cooker like this and he came over to our house to get it and wanted to test it out. I got him out a few packs of venison and asked him to do it out front of the house. We lived in a small town at the time and after a while the cops showed up. They said a neighbor called them saying someone was cooking meth right outside our house. I couldn't believe they did that because you could smell the meat everywhere out there. The coos laughed when they seen what it was all about.

That's like some of the people around here would do lol I think sometimes they just want to watch the excitement go down or they just secretly want to cause a little trouble for you. Just depends 😊

Processing your own meat is getting to be a lost art. Good for you guys. We have a cabelas jerky slicer we run most of the roasts through while caning the rest except the backstraps and bottom round. Junk gets canned for dog food.

I grew up & still live in a very urban family & city (all in the way in Canada!) so I never got the chance to harvest and hunt for meat the way you guys are able to! It's such a special process, and I'm sure that it's such a treat.

Thanks for the video! We canned 48 pints of venison last year also some chunked up goose breast. That way we'd have enough to eat a jar every week until the next season. We ran out in July 😂

You are such a Close Family and I Wish I Could say the same.
I raised my kids on deer meat and they now range in age from 35 to 43 and it is still their favorite. Too many people don't know how to care for it after harvesting, so some people think it's gamey...which it is if you don't dress it and get it cooled down as soon as possible. Congrats to Austin! Hope God grants me the physical strength to get out and hunt some this year....love to have the freezer filled.

How do you save the bacon grease when you bake it?🤔 I've never seen it cooked that way. My Mom did it in the microwave, but she didn't usually save the grease,, but when I moved to Texas then Tennessee I learned "no self-respectin' southern girl would be caught dead without a baco grrease jar/can in the fridge 😂🤣😂

Congrats, Austin, on bagging the deer!🦌When we're processing the meat, we do the same as ya'll . It's time-consuming, getting that silver stuff off, but the meat is so much better. Never have canned it before.
Off topic question 😅: How is Olive when it comes to Katie, is she clingy or is she a little distant? All my life dogs have acted some kind of way when someone was expecting.😊

My father-in-law cans deer meat but I’m never sure how to fix it. I’m from West Virginia but my dad had to grow up in Chicago because his parents needed jobs.
Deer season opens here Saturday. I usually grind most of it with beef tallow.
Tacos, chili, spaghetti sauce, minestrone, anything you would use ground beef. I seldom eat beef and when I do now it tastes strong.
I love breakfast for dinner. That's when I make biscuits and gravy because I don't eat in morning.
My daddy used to tell me they used bacon grease on toast back in the depression when they didn’t have butter. Gotta love breakfast dinner! ❤🎉
Thanks Folks. Never tried deer, must do some day. My paternal Nan had and said it had a "gamey' taste. They never canned their meats. Back then, on a sheep station, while fresh, it was usually that awful greasy Mutton.
I don't know what it is, but seeing meat in a jar makes me gag. I know the meat is tasty though, because I've had it. When we lived out west our main meat was deer and elk. We never canned it though, just froze it. Our dogs (and neighbor's dog) enjoyed the scraps. They would eat until they were full, then head to the porch for a long nap.
Like I have always said that I don't have an issue with hunters are long as you eat the meat the animal provides and it is killed with as little pain as possible........I still think you two should adopt some kids......You would make awesome parents.
I just love seeing the love you all have for each other! ❤ I did think you might use pint jars since it’s just the two of you. A good rule of thumb is pints hold one pound of meat and quarts hold two pounds.

I have always ground my bucks up, they are always tougher and gamey so i make alot of sausage with them, i hunt alot of hogs here in southeast Oklahoma along the red river so i use wild hog fat for our sausage i also have wild sage around my house which tastes better than store bought, makes awesome sausage gravy for breakfast.
Up in Taxachusetts, you need a doe permit. They only issue a specific amount of doe permits each year.
Never even had a bite of deer meat in my life. I do have some eating my plants, so you can come and get them if you want LOL.

It is amazing how much liquid is formed through the pressure canning process. I was surprised to see that you did not add liquid before canning. I am hoping my husband gets a deer this year, because I want to try canning some of it! Thanks for sharing. Enjoy!

Interesting how relaxing it was to watch this whole video. I wondered if Austin’s knife was a little sharper or had a thinner blade to get super close to the silver skin. Can you cook those scraps and chop them for Olive? Roast and boil bones into stock for soup or dog food? Just wondering :-)

We love to can deer meat too. We love to put one slice of bacon on top of the meat in each jar before putting the seal on and the ring. Oh my goodness! That one slice of bacon in each jar makes it amazing to taste! When we are ready to eat it, we dump the jar in a pot with a can of cream of mushroom soup with no water. The juices from the canned deer meat mixed in with the can of cream of mushroom soup makes its own gravy in the deer stew! Amazing over rice! It’s so good! My husband just celebrated his 45 th deer season! Today is his birthday! He’s 57! So blessed!
I miss canning, it is a lot of hard work, but it is worth it. I would can anything I could get my hands on. All that is gone for me because I can't stand or walk. But God has a plan, I don't know what that is but who can you trust if you can't trust God? Katie Daddy loves you very much I can see something in your eyes when you look at him that wasn't there before. Remember God is good, and He will make everything alright. Rest easy little one. We have lots of red shouldered hawks here. I have seen a single crow escort a red shouldered hawk out of the immediate neighborhood. More often there are two or even three escorts, sometimes of the same specie (two crows or two blue jays), sometimes not (a crow and a blue jay or a blue jay and a cardinal). Have never understood why a bird as big as a hawk would fear the smaller bird(s). About the deer meat--people often think of it as free meat. When you spend the time and money to hunt the deer, process the deer and can it, it is far from free. If you had to pay for the time, it would be very expensive meat. God Bless.

My first pressure cooker i didn't let the pressure out right and the lid blew off and the entire dinner was on the ceiling. I cried so much and threw that pot in the trash. 30yrs later It's called an instapot and now i cant live with out it. Hi from lutz Florida USA

The meat will last a long long time as long as the jar is sealed. It doesn’t have to be refrigerated until the jar is opened. Sometimes we give her a few scraps and we toss the rest outside and they’re usually gone within the night 😁

I have done this so many times, my husband was always an avid deer hunter, we always had deer in the freezer. It is a lot of work but worth it. I agree the back strap is my fav! We also made a LOT of deer jerky, delicious! This brings back sweet memories for me, I lost my husband in 2020, and I actually haven't eaten deer since then.

I can hardly wait for deer season. My husband, son and some of my grandsons hunt. I just started pressure canning about 8 months ago and instead of freezing all the meat, I’ll be canning it. So far, I have lots of chicken breast, chicken on the bone, ground beef, rabbit, rabbit stew, deer stew, beef stew and all kinds of beans with ham. Great video.

Hi Corie, your supper looked delicious.
Here’s a tip for you on removing the silver skin:
If you take the point of the knife and can get under it just enough to lift/release it from the meat (enough to get a good grip on it), take a piece of paper towel and use that to grip the slippery silver skin and just pull it off. It works well and you loose less meat. I always do this when removing the silver skin from my pork ribs, it’s so much faster too. Hope this helps.
Deer season will soon be opened here in our Province (🇨🇦) and we can hardly wait. My husband, our son & I all hunt and enjoy the savings $$$, as well as the fact that it’s healthier meat!

That's the way we remove silver skin as well. We wrap and freeze most of our meat. I love deer meat!

We put up5 or 6 dear a year we put it up the same way that you do I have videos of me debone 4 at a time we ground a lot of burger and caned a lot to . I don’t hunt now since my wife passed it’s just me at home and my leges are bad I think the deer know it because the walk around in the yard while I mow the grass but it was fun all the years I did hunt . I really enjoyed your video of you two team working .♥️

I love canned deer. Was Always used to having steaks frozen roast for baking tenderloin & canned deer. Have No One who has a place to hunt & I've not been physically able to in yrs. But it is SO NICE WHEN YOU HAVE IT & Canned is So convenient.. God Bless

Ok, dumb question here, because I know zero about deer meat or canning, By canning the meat for 90 minutes that fully cooks it, yes? In what ways would you serve the cubed meat? Like pot roast? Thanks!

I was raised on a farm. My parents canned everything. Six kids. 2 adults.The first time I had ever tried store bought vegetables in the can, I was 17. Why I didn't take on canning, I'll never know. One of my many regrets.

Congrats Austin, I canned Deer Meat for about 40 Years in Pressure Canners. A few simple Steps, some attention to a few details, never had a problem with Quality of the Meat. My favorite way to Eat Canned Venison is to make Hunters Stew. God bless both Austin and Corrie, Olive , Your Home and all Your Days. 😃
